  • 10 egg roll wrappers
  • 1 large egg, beaten (for sealing)

Instructions

Step 1: Prepare the Cheesecake Filling

  1. In a medium mixing bowl, beat the cream cheese until smooth and creamy, about 2 minutes.
  2. Add the sugar, vanilla extract, and almond extract (if using). Beat until well combined and fluffy. Set aside.

Step 2: Prepare the Cherry Filling

  1. If desired, stir the lemon juice into the cherry pie filling to brighten the flavor. Set aside.

Step 3: Assemble the Egg Rolls

  1. Lay an egg roll wrapper on a clean surface in a diamond orientation (point facing you).
  2. Spoon 1 1/2 tablespoons of the cheesecake filling into the center of the wrapper and spread it into a small rectangle.
  3. Add 1 tablespoon of cherry filling on top of the cheesecake mixture.
  4. Fold the bottom point of the wrapper up over the filling, then fold in the sides to enclose it. Roll the wrapper tightly, sealing the edge with a bit of the beaten egg. Repeat with the remaining wrappers and filling.

Step 4: Air Fry the Egg Rolls

  1. Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
  2. Lightly spray the air fryer basket with non-stick cooking spray or brush with a small amount of oil.
  3. Place the egg rolls in a single layer in the basket, leaving space between them to ensure even cooking. Spray or brush the tops lightly with oil.
  4. Air fry for 8-10 minutes, turning halfway through, until golden brown and crispy.

Step 5: Garnish and Serve

  1. Let the egg rolls cool slightly before serving. Dust with powdered sugar for a classic touch or drizzle with melted chocolate for added indulgence. Serve with whipped cream for dipping, if desired.
