Instructions
Step 1: Prepare the Cheesecake Filling
- In a medium mixing bowl, beat the cream cheese until smooth and creamy, about 2 minutes.
- Add the sugar, vanilla extract, and almond extract (if using). Beat until well combined and fluffy. Set aside.
Step 2: Prepare the Cherry Filling
- If desired, stir the lemon juice into the cherry pie filling to brighten the flavor. Set aside.
Step 3: Assemble the Egg Rolls
- Lay an egg roll wrapper on a clean surface in a diamond orientation (point facing you).
- Spoon 1 1/2 tablespoons of the cheesecake filling into the center of the wrapper and spread it into a small rectangle.
- Add 1 tablespoon of cherry filling on top of the cheesecake mixture.
- Fold the bottom point of the wrapper up over the filling, then fold in the sides to enclose it. Roll the wrapper tightly, sealing the edge with a bit of the beaten egg. Repeat with the remaining wrappers and filling.
Step 4: Air Fry the Egg Rolls
- Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
- Lightly spray the air fryer basket with non-stick cooking spray or brush with a small amount of oil.
- Place the egg rolls in a single layer in the basket, leaving space between them to ensure even cooking. Spray or brush the tops lightly with oil.
- Air fry for 8-10 minutes, turning halfway through, until golden brown and crispy.
Step 5: Garnish and Serve
- Let the egg rolls cool slightly before serving. Dust with powdered sugar for a classic touch or drizzle with melted chocolate for added indulgence. Serve with whipped cream for dipping, if desired.
