- 2 slices of stale bread or ½ cup breadcrumbs
- 1 large egg
- 2 tbsp milk
- 1 tsp Dijon mustard
- ½ tsp ground nutmeg
- 1 tsp dried marjoram (optional but traditional; substitute with oregano if needed)
- Salt and freshly ground black pepper, to taste
- 2 tbsp vegetable oil for frying
- Optional: chopped fresh parsley for garnish
Instructions
1. Prepare the Bread
If using stale bread, tear it into small pieces and soak it in milk until soft. After a few minutes, squeeze out the excess liquid. If you’re using breadcrumbs, mix them with the milk to create a similar texture. This step ensures the patties remain moist and tender.
2. Combine the Ingredients
In a large mixing bowl, combine the ground meat, softened bread or breadcrumbs, diced onion, egg, mustard, nutmeg, marjoram, salt, and pepper. Using clean hands or a sturdy spoon, gently mix the ingredients until they are just incorporated. Avoid overmixing, as this can make the patties dense.
3. Shape the Patties
Divide the meat mixture into eight equal portions. Shape each portion into a flat, oval patty, about ½ inch thick. The traditional oval shape ensures even cooking and makes them distinct from other meat dishes.
4. Preheat the Pan
Heat the vegetable oil in a large skillet over medium heat.
5. Fry the Frikadellen
Once the oil is hot, carefully place the patties in the skillet. Avoid overcrowding the pan; cook in batches if necessary. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Use a spatula to flip the patties gently.
6. Rest and Serve
Transfer the cooked Frikadellen to a plate lined with paper towels to drain excess oil. Allow them to rest for a few minutes before serving. Garnish with fresh parsley if desired.
