Ingredients
For the Fritter Dough:
- 2 cups all-purpose flour
- ¼ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ½ cup whole milk (room temperature)
- 2 large eggs (room temperature)
- ¼ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 medium apples, peeled, cored, and diced (about 1½ cups)
For the Cinnamon-Sugar Filling (Optional):
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons milk (plus more if needed for consistency)
- ½ teaspoon vanilla extract
Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or a silicone baking mat and set aside.
Step 2: Mix the Dry Ingredients
In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg until evenly combined.
Step 3: Combine the Wet Ingredients
In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth.
Step 4: Prepare the Apples
Peel, core, and dice the apples into small, bite-sized pieces. Gently fold the diced apples into the wet ingredients to ensure even distribution.
Step 5: Combine the Dough
Gradually add the wet ingredients to the dry ingredients, mixing with a spatula or wooden spoon until just combined. Do not overmix; the dough should be thick and slightly sticky.
Step 6: Add Optional Cinnamon-Sugar Filling
If using the cinnamon-sugar filling, sprinkle the brown sugar and cinnamon mixture over the dough. Lightly fold it in, creating swirls rather than fully incorporating it.
Step 7: Shape the Fritters
Using a large spoon or ice cream scoop, drop mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart. Aim for a rough, slightly irregular shape to mimic the look of traditional fritters.
Step 8: Bake
Bake in the preheated oven for 15-18 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
Step 9: Make the Glaze
While the fritters bake, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Adjust the consistency by adding more milk, 1 teaspoon at a time, if needed.
Step 10: Glaze the Fritters
Remove the fritters from the oven and let them cool slightly on the baking sheet for 5 minutes. Drizzle the glaze over the warm fritters using a spoon or pastry brush. For a thicker glaze, allow the fritters to cool completely before glazing.
Step 11: Serve
Serve the baked apple fritters warm or at room temperature. Enjoy them plain or with your favorite hot beverage.
