- 1 lb (450g) large shrimp, peeled and deveined
- 3 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp paprika
- ¼ tsp red pepper flakes (optional, for heat)
- 1 tbsp fresh parsley, chopped
- ½ tsp dried oregano
- ½ tsp dried thyme
- 2 tbsp grated Parmesan (optional, for extra richness)
- 1 tbsp olive oil
- 1 cup cherry tomatoes, halved (optional, for added freshness)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C). Lightly grease a baking dish or oven-safe skillet to prevent sticking.
Step 2: Prepare the Shrimp
Pat the shrimp dry with paper towels to remove excess moisture. This helps them absorb the flavors of the seasoning.
Step 3: Make the Lemon Butter Sauce
In a small bowl, whisk together the melted butter, minced garlic, lemon juice, lemon zest, olive oil, salt, black pepper, paprika, red pepper flakes, oregano, and thyme.
Step 4: Coat the Shrimp
Place the shrimp in a single layer in the prepared baking dish. Pour the lemon butter sauce over the shrimp, tossing gently to coat evenly. If using cherry tomatoes, scatter them around the shrimp.
Step 5: Bake the Shrimp
Bake for 8–10 minutes, or until the shrimp turn pink and opaque. Do not overcook, as shrimp can become rubbery if left in the oven too long.
Step 6: Garnish and Serve
Remove the shrimp from the oven and sprinkle with chopped parsley and grated Parmesan. Serve immediately with your favorite sides.
