- 1 tablespoon lime juice

- 2 tablespoons chopped green onions

Instructions
Step 1: Prep the Salmon
Pat the salmon cubes dry with paper towels to remove excess moisture. In a mixing bowl, toss the salmon with garlic powder, smoked paprika, salt, and black pepper. Ensure the seasoning is evenly distributed.
Step 2: Coat the Salmon
Add the cornstarch to the bowl and toss the salmon until each piece is lightly coated. This helps create a crispy exterior when cooking.
Step 3: Cook the Salmon
Heat the olive oil in a large nonstick skillet over medium-high heat. Once hot, add the salmon cubes in a single layer, ensuring they don’t touch. Cook for 2-3 minutes per side, turning gently with tongs until all sides are golden and the salmon is cooked through. Remove from the skillet and set aside on a paper towel-lined plate to drain excess oil.
Step 4: Make the Bang Bang Sauce
In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice until smooth. Taste and adjust the spice level by adding more sriracha if desired.
Step 5: Combine and Serve
Transfer the cooked salmon bites to a serving platter and drizzle with the Bang Bang sauce. Sprinkle with chopped green onions and sesame seeds for garnish. Serve immediately with lime wedges on the side.
