Blackberry & Goat Cheese Grilled Cheese

  • Author: Amelia
  • Total Time: 20 minutes
  • Yield: 2 sandwiches 1x

Ingredients

Scale

Sandwich Ingredients

  • 4 slices of artisan bread (sourdough, ciabatta, or whole grain)
  • 4 ounces goat cheese (soft, room temperature)
  • ½ cup fresh blackberries
  • 2 tablespoons honey
  • 2 tablespoons unsalted butter (softened)

Optional Additions

  • A handful of arugula or baby spinach (for added freshness)
  • A sprinkle of crushed walnuts or pecans (for crunch)
  • 12 teaspoons fresh thyme or rosemary (for a herby kick)

Toppings (Optional)

  • Extra honey drizzle
  • A pinch of flaky sea salt
  • Cracked black pepper

Instructions

Step 1: Prepare the Ingredients

  • Goat Cheese: Let the goat cheese sit at room temperature for about 15 minutes to make it easier to spread.
  • Blackberries: Lightly mash the blackberries with a fork to release their juices while leaving some pieces whole for texture.
  • Bread: Choose a sturdy bread with a good crust, as it will hold up well during grilling and provide a satisfying crunch.

Step 2: Assemble the Sandwich

  • Spread a generous layer of goat cheese on one side of each bread slice.
  • Spoon the mashed blackberries over the goat cheese on two of the slices. Drizzle honey on top of the blackberries for a touch of sweetness.
  • If using optional ingredients like arugula, nuts, or herbs, layer them on top of the blackberries.
  • Place the remaining slices of bread, goat cheese side down, on top to complete the sandwiches.

Step 3: Butter the Bread

  • Spread a thin layer of softened butter on the outer sides of each sandwich. This will help the bread turn golden and crisp during cooking.

Step 4: Cook the Sandwiches

  • Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, pressing gently with a spatula to ensure even browning. Lower the heat if the bread browns too quickly before the cheese melts.
  • Once the bread is golden brown and the cheese is soft and gooey, remove the sandwiches from the skillet.

Step 5: Slice and Serve

  • Let the sandwiches cool for 1-2 minutes before slicing them in half. This helps the cheese set slightly and prevents it from oozing out.
  • Serve immediately with an extra drizzle of honey or a side of fresh blackberries.
