For the Truffle Filling:

Instructions
Step 1: Prepare the Truffle Filling
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2 minutes.
- Add the powdered sugar, vanilla extract, and almond extract (if using). Beat until fully combined and fluffy.
- Gently fold in the melted and cooled white chocolate chips until smooth. Add the blue food coloring gel, a little at a time, and mix until the desired shade of blue is achieved.
Step 2: Chill the Filling
- Cover the bowl with plastic wrap and refrigerate for 1–2 hours, or until the mixture is firm enough to shape into balls.
Step 3: Shape the Truffles
- Use a small cookie scoop or a tablespoon to portion out the filling. Roll each portion between your palms to form smooth balls about 1 inch in diameter. Place the truffles on a parchment-lined baking sheet.
- Chill the shaped truffles in the refrigerator for 30 minutes to firm up before coating.
Step 4: Melt the Coating
- In a microwave-safe bowl, melt the white chocolate or blue candy melts in 30-second intervals, stirring between intervals until smooth. If using white chocolate, add the coconut oil to thin it slightly for easier dipping.
Step 5: Coat the Truffles
- Using a fork or dipping tool, lower each truffle into the melted chocolate, ensuring it is fully coated. Lift the truffle out, letting the excess chocolate drip off. Place the coated truffles back on the parchment-lined baking sheet.
Step 6: Decorate
- Immediately after coating each truffle, sprinkle it with blue sanding sugar, edible glitter, or your desired decorations. Add snowflake-shaped accents or silver sprinkles for a wintry touch.
- Allow the chocolate coating to set completely, either at room temperature or in the refrigerator.
Step 7: Serve or Store
- Once the coating is firm, arrange the truffles on a serving platter or store them in an airtight container. Keep them refrigerated until ready to serve.
