  • Chopped fresh parsley, for garnish

For the Garlic Herb Potatoes:

  • 1 1/2 pounds baby potatoes (or Yukon gold potatoes, cut into bite-sized pieces)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Optional Add-Ins and Variations:

  • 1/2 teaspoon red pepper flakes (for a bit of heat)
  • 1/4 cup grated Parmesan cheese (for extra flavor on the potatoes)
  • Asparagus, green beans, or mushrooms (to add extra vegetables to the meal)
  • Lemon wedges (for serving, to add a fresh citrus kick)

For Serving:

  • Fresh herbs, for garnish
  • Garlic aioli or creamy horseradish sauce, for dipping

Instructions

Step 1: Prepare the Potatoes

1. Preheat the Oven:

If you’re roasting the potatoes, preheat your oven to 400°F (200°C). Alternatively, you can cook the potatoes on the stovetop (instructions below).

2. Cook the Potatoes:

If roasting in the oven, toss the baby potatoes in 2 tablespoons olive oil, salt, and pepper, and spread them out on a baking sheet. Roast for 20-25 minutes, flipping halfway through, until golden and crispy on the outside.

If cooking on the stovetop, parboil the potatoes in salted water for 5-7 minutes until just tender. Drain and pat them dry.

3. Sauté with Garlic and Herbs:

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic, fresh rosemary, and thyme, and sauté for 1-2 minutes until fragrant. Toss the roasted or parboiled potatoes in the skillet, coating them in the garlic butter. Cook for an additional 5-7 minutes until the potatoes are crispy on the outside and fully infused with the garlic herb flavors.

Step 2: Prepare the Steak Bites

1. Season the Steak:

While the potatoes are cooking, pat the steak bites dry with paper towels and season generously with salt and pepper.

2. Sear the Steak:

In a large skillet or cast-iron pan, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is hot and shimmering, add the steak bites in a single layer (you may need to cook them in batches to avoid overcrowding the pan).

Sear the steak for 2-3 minutes per side, until browned and cooked to your desired doneness. For medium-rare, aim for an internal temperature of 130-135°F (54-57°C), and for medium, cook until the temperature reaches 140-145°F (60-63°C).

3. Add the Garlic and Butter:

During the last minute of cooking, add 2 tablespoons of butter, minced garlic, Worcestershire sauce, fresh thyme, and rosemary to the pan. Toss the steak bites in the garlic butter sauce, allowing the butter to melt and coat the steak.

4. Rest the Steak:

Remove the steak bites from the pan and transfer them to a plate. Let the steak rest for 5 minutes to allow the juices to redistribute.

Step 3: Combine and Serve

1. Toss the Steak and Potatoes Together:

Once the steak has rested, combine the steak bites and garlic herb potatoes in a large serving dish. Toss them gently to mix the flavors.

2. Garnish with Fresh Herbs:

Garnish the steak bites and potatoes with fresh parsley, rosemary, or thyme. For extra flavor, sprinkle with a bit of Parmesan cheese or red pepper flakes if desired.

3. Serve Hot:

Serve the steak bites and potatoes hot, either as a standalone dish or alongside your favorite dipping sauces like garlic aioli or creamy horseradish sauce. A side of crusty bread is perfect for soaking up any leftover garlic butter from the plate.
