Butter Steak Bites with Garlic Herb Potatoes

  • For the steak bites:
    • 1 lb steak (sirloin, ribeye, or your favorite cut), cut into bite-sized pieces
    • Salt and pepper, to taste
    • 2 tablespoons butter
    • 3 cloves garlic, minced
    • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
    • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • For the potatoes:
    • 1 lb baby potatoes, cut in half
    • 2 tablespoons olive oil
    • Salt and pepper, to taste
    • 1 teaspoon garlic powder
    • 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)
    • 1 tablespoon butter

Instructions

  1. Cook the potatoes: Heat a large skillet over medium heat and add the olive oil. Once hot, add the halved baby potatoes, cut side down. Season with salt, pepper, garlic powder, and rosemary. Cook for 10–12 minutes, flipping halfway through, until golden and crispy on the outside and tender on the inside. Add 1 tablespoon of butter to the potatoes during the last few minutes of cooking to give them extra flavor. Remove from the skillet and set aside.
  2. Prepare the steak bites: In the same skillet, increase the heat to medium-high. Season the steak bites with salt and pepper. Add the butter to the skillet and let it melt. Once the butter is melted and bubbling, add the steak bites in a single layer. Cook for 2–3 minutes per side for a medium-rare doneness, or longer if you prefer your steak more cooked. Remove the steak bites and set aside.
  3. Make the garlic herb sauce: Lower the heat to medium and add the minced garlic to the skillet. Sauté for 1 minute, until fragrant, being careful not to burn it. Stir in the fresh parsley and thyme.
  4. Combine and serve: Add the steak bites and crispy potatoes back into the skillet, tossing them in the garlic herb butter. Serve immediately, garnished with extra herbs if desired.
