  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon heavy cream (optional, for a creamy finish)

Instructions

Step 1: Prepare the Steaks

  1. Remove the steaks from the refrigerator and let them sit at room temperature for 20-30 minutes. This ensures even cooking.
  2. Pat the steaks dry with paper towels to remove excess moisture. Season generously on both sides with Cajun seasoning, salt, and black pepper.

Step 2: Sear the Steaks

  1. Heat a large cast-iron skillet over medium-high heat and add the olive oil.
  2. When the skillet is hot, place the steaks in the pan. Sear for 3-4 minutes on each side for medium-rare, or adjust the cooking time to your preferred doneness. Use a meat thermometer to ensure accuracy (135°F for medium-rare, 145°F for medium).
  3. Once cooked to your liking, transfer the steaks to a plate and cover them with foil to rest while you make the sauce.

Step 3: Make the Cajun Butter Bourbon Sauce

  1. Reduce the heat to medium and add 2 tablespoons of butter to the same skillet. Let it melt, then add the minced garlic. Sauté for 30 seconds until fragrant.
  2. Carefully pour in the bourbon, scraping the bottom of the skillet to deglaze and release the flavorful browned bits. Let the bourbon simmer for 1-2 minutes to cook off the alcohol.
  3. Stir in the beef broth, smoked paprika, cayenne pepper, and Worcestershire sauce. Simmer for 3-4 minutes to allow the sauce to reduce slightly.
