- 4 tablespoons unsalted butter (divided)
- 2 garlic cloves (minced)
- 1/4 cup bourbon
- 1/4 cup beef broth
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon Worcestershire sauce
- 1 tablespoon heavy cream (optional, for a creamy finish)

Instructions
Step 1: Prepare the Steaks
- Remove the steaks from the refrigerator and let them sit at room temperature for 20-30 minutes. This ensures even cooking.
- Pat the steaks dry with paper towels to remove excess moisture. Season generously on both sides with Cajun seasoning, salt, and black pepper.
Step 2: Sear the Steaks
- Heat a large cast-iron skillet over medium-high heat and add the olive oil.
- When the skillet is hot, place the steaks in the pan. Sear for 3-4 minutes on each side for medium-rare, or adjust the cooking time to your preferred doneness. Use a meat thermometer to ensure accuracy (135°F for medium-rare, 145°F for medium).
- Once cooked to your liking, transfer the steaks to a plate and cover them with foil to rest while you make the sauce.
Step 3: Make the Cajun Butter Bourbon Sauce
- Reduce the heat to medium and add 2 tablespoons of butter to the same skillet. Let it melt, then add the minced garlic. Sauté for 30 seconds until fragrant.
- Carefully pour in the bourbon, scraping the bottom of the skillet to deglaze and release the flavorful browned bits. Let the bourbon simmer for 1-2 minutes to cook off the alcohol.
- Stir in the beef broth, smoked paprika, cayenne pepper, and Worcestershire sauce. Simmer for 3-4 minutes to allow the sauce to reduce slightly.
- Whisk in the remaining 2 tablespoons of butter and heavy cream (if using) for a silky finish. Adjust seasoning with salt and pepper, if needed.
Step 4: Combine and Serve
- Return the steaks to the skillet and spoon the sauce over them. Let them warm in the sauce for 1-2 minutes.
- Plate the steaks and drizzle additional sauce over the top. Garnish with chopped parsley and serve with your favorite sides.
