- 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika (optional, for extra flavor)
- 1 tablespoon olive oil
- 8 oz pasta (penne, rotini, or any short pasta)
For the Cheesy Sauce:
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups milk (whole milk for extra creaminess)
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 ½ cups shredded cheddar cheese
- ½ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese
Optional Add-ins & Toppings:
- ½ teaspoon red pepper flakes (for a spicy kick)
- ½ cup cooked crispy bacon (chopped)

Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to package instructions until al dente.
- Drain the pasta and set aside.
Step 2: Cook the Chicken
- In a bowl, season the chicken pieces with salt, pepper, garlic powder, and smoked paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken and cook for about 5-7 minutes, stirring occasionally until fully cooked and golden brown.
- Remove the chicken from the skillet and set aside.
Step 3: Make the Cheese Sauce
- In the same skillet, melt butter over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Stir in flour and cook for 1 minute, whisking constantly to prevent lumps.
- Slowly pour in the milk and heavy cream, whisking continuously to create a smooth mixture.
- Add Italian seasoning, salt, and black pepper, stirring to combine.
- Let the sauce simmer for 3-5 minutes until it thickens.
- Reduce heat to low and gradually add the cheddar, Parmesan, and mozzarella cheese, stirring until melted and smooth.
Step 4: Combine Everything
- Add the cooked pasta and chicken back into the skillet with the cheese sauce.
- Stir everything together until the pasta and chicken are fully coated in the creamy, cheesy sauce.
- Cook for another 2-3 minutes on low heat.
Step 5: Serve and Enjoy!
- Transfer to serving bowls and garnish with parsley, crispy bacon, or red pepper flakes.
