  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (optional, for extra flavor)
  • 1 tablespoon olive oil
  • 8 oz pasta (penne, rotini, or any short pasta)

For the Cheesy Sauce:

  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups milk (whole milk for extra creaminess)
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese

Optional Add-ins & Toppings:

  • ½ teaspoon red pepper flakes (for a spicy kick)
  • ½ cup cooked crispy bacon (chopped)

Instructions

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Add the pasta and cook according to package instructions until al dente.
  • Drain the pasta and set aside.

Step 2: Cook the Chicken

  • In a bowl, season the chicken pieces with salt, pepper, garlic powder, and smoked paprika.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the chicken and cook for about 5-7 minutes, stirring occasionally until fully cooked and golden brown.
  • Remove the chicken from the skillet and set aside.

Step 3: Make the Cheese Sauce

  • In the same skillet, melt butter over medium heat.
  • Add minced garlic and sauté for about 30 seconds until fragrant.
  • Stir in flour and cook for 1 minute, whisking constantly to prevent lumps.
  • Slowly pour in the milk and heavy cream, whisking continuously to create a smooth mixture.
  • Add Italian seasoning, salt, and black pepper, stirring to combine.
  • Let the sauce simmer for 3-5 minutes until it thickens.
  • Reduce heat to low and gradually add the cheddar, Parmesan, and mozzarella cheese, stirring until melted and smooth.

Step 4: Combine Everything

  • Add the cooked pasta and chicken back into the skillet with the cheese sauce.
  • Stir everything together until the pasta and chicken are fully coated in the creamy, cheesy sauce.
  • Cook for another 2-3 minutes on low heat.

Step 5: Serve and Enjoy!

  • Transfer to serving bowls and garnish with parsley, crispy bacon, or red pepper flakes.
