  • 4 boneless, skinless chicken breasts (about 56 oz each)
  • 1/2 cup all-purpose flour (for dredging)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, divided
  • 1/2 cup dry white wine (or chicken broth for a non-alcoholic option)
  • 3/4 cup chicken broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons capers, drained and rinsed
  • 2 tablespoons chopped fresh parsley (for garnish)
  • Optional: Lemon slices, for garnish

Instructions

  1. Prepare the chicken: Place each chicken breast between two pieces of plastic wrap or parchment paper. Pound with a meat mallet until about 1/4-inch thick. Season both sides with salt and pepper.
  2. Dredge the chicken: Lightly coat each chicken breast in flour, shaking off any excess. Set aside.
  3. Sear the chicken: Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken and cook for 3–4 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
  4. Deglaze the pan: Reduce the heat to medium. Add the white wine to the skillet, scraping up any browned bits from the bottom of the pan with a wooden spoon. Let it simmer for 2–3 minutes, allowing the alcohol to evaporate.
  5. Make the sauce: Stir in the chicken broth, lemon juice, and capers. Simmer for 3–4 minutes, letting the flavors meld and the sauce reduce slightly.
  6. Finish the sauce: Whisk in the remaining tablespoon of butter to create a silky texture. Taste and adjust seasoning with salt and pepper as needed.
  7. Return the chicken: Place the cooked chicken back into the skillet, spooning the sauce over the top. Simmer for 2 minutes to reheat the chicken and allow it to absorb the flavors.
  8. Garnish and serve: Sprinkle with fresh parsley and garnish with lemon slices if desired. Serve warm with your favorite side dish.
