- 2 packs of ramen noodles (discard seasoning packets)
- 2 tablespoons vegetable oil (or sesame oil for extra flavor)
- 1 pound boneless, skinless chicken breast, thinly sliced
- 1 red bell pepper, julienned
- 1 cup broccoli florets
- 1 medium carrot, julienned
- 1/2 cup snap peas
- 3 green onions, chopped (plus more for garnish)
Stir-Fry Sauce:
- 1/4 cup soy sauce (use low-sodium for a healthier option)
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon honey or brown sugar
- 1 teaspoon grated ginger
- 2 garlic cloves, minced
- 1 teaspoon chili paste (optional, for spice)
- 1 tablespoon cornstarch mixed with 2 tablespoons water
Instructions
Step 1: Prepare the Noodles
Bring a pot of water to a boil and cook the ramen noodles according to the package instructions, but reduce the cooking time by 1 minute to prevent overcooking. Drain and rinse the noodles with cold water to stop the cooking process. Set aside.
Step 2: Make the Stir-Fry Sauce
In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, honey, grated ginger, minced garlic, and chili paste (if using). Mix the cornstarch and water separately, then add it to the sauce. This will help thicken the sauce later.
Step 3: Cook the Chicken
Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the sliced chicken and cook for 4-5 minutes, or until golden brown and fully cooked. Remove the chicken from the pan and set aside.
Step 4: Stir-Fry the Vegetables
In the same pan, add another tablespoon of oil. Toss in the broccoli, bell pepper, carrot, and snap peas. Stir-fry for 3-4 minutes, or until the vegetables are tender but still crisp.
Step 5: Combine Ingredients
Return the cooked chicken to the pan with the vegetables. Add the cooked ramen noodles and pour the prepared stir-fry sauce over the top. Toss everything together to coat evenly. Cook for an additional 2-3 minutes, allowing the sauce to thicken and the flavors to meld.
Step 6: Garnish and Serve
Garnish with chopped green onions and sesame seeds, if desired. Serve hot and enjoy your Chicken Ramen Stir Fry!
