Cinnamon Brown Sugar Pancakes

  • Author: Amelia
  • Total Time: 25 minutes
  • Yield: 12 pancakes 1x

Ingredients

Scale

Dry Ingredients:

  • 2 cups all-purpose flour
  • 2 tbsp brown sugar (light or dark)
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon

Wet Ingredients:

  • 1 ¼ cups milk (whole or buttermilk)
  • 2 large eggs
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract

Optional Add-ins:

  • ½ tsp nutmeg (for extra warmth)
  • ¼ cup chopped pecans or walnuts (for crunch)
  • ¼ cup mini chocolate chips (for a sweeter touch)

Instructions

Step 1: Mix the Dry Ingredients

  1. In a large mixing bowl, whisk together flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
  2. Ensure everything is well combined to distribute the leavening agents evenly, helping the pancakes rise properly.

Step 2: Combine the Wet Ingredients

  1. In a separate bowl, whisk together milk, eggs, melted butter, and vanilla extract until smooth.
  2. If using buttermilk, it will add a slight tanginess and make the pancakes even fluffier.

Step 3: Make the Batter

  1. Gradually pour the wet ingredients into the dry ingredients, stirring gently with a spatula or whisk.
  2. Mix until just combined—do not overmix, as a few lumps are okay. Overmixing can make the pancakes dense.
  3. Let the batter rest for 5 minutes to allow the flour to absorb the liquid, resulting in fluffier pancakes.

Step 4: Cook the Pancakes

  1. Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
  2. Pour ¼ cup of batter onto the skillet for each pancake.
  3. Cook for 2-3 minutes, until bubbles form on the surface and the edges start to set.
  4. Flip gently and cook for another 1-2 minutes until golden brown.
  5. Repeat with the remaining batter, adjusting heat if needed.

Step 5: Serve and Enjoy

  1. Stack the pancakes on a plate and serve immediately.
  2. Top with butter, maple syrup, whipped cream, or fresh fruit.
  3. For extra indulgence, sprinkle with cinnamon sugar or drizzle with caramel sauce.
