Instructions
Step 1: Preheat and Prepare
Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan and line the bottom with parchment paper for easy removal.
Step 2: Make the Cake Base
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Mix until just combined.
- Spread the cake batter evenly into the bottom of the prepared springform pan. Smooth the top with a spatula.
Step 3: Prepare the Cheesecake Layer
- In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add the eggs, one at a time, mixing on low speed until just incorporated. Stir in the vanilla extract and sour cream.
- Pour the cheesecake batter over the cake layer in the springform pan, spreading evenly.
Step 4: Make the Streusel Topping
- In a medium bowl, combine the flour, brown sugar, and ground cinnamon.
- Stir in the melted butter until the mixture resembles coarse crumbs.
- Sprinkle the streusel evenly over the cheesecake layer.
Step 5: Bake the Cheesecake
- Place the springform pan in the preheated oven and bake for 60–70 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven, crack the door slightly, and let the cheesecake cool in the oven for 1 hour.
- Transfer to a wire rack and cool completely. Refrigerate for at least 4–6 hours (or overnight) before serving.
Step 6: Garnish and Serve
- Before serving, dust the cheesecake with powdered sugar for a classic coffee cake look. Add a drizzle of cinnamon glaze if desired.
