For the Shrimp Scampi
- 1 pound large shrimp, peeled and deveined
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes (optional, for heat)
- 1/2 cup dry white wine (like Sauvignon Blanc or Pinot Grigio)
- Juice of 1 lemon (about 2 tablespoons)
- Zest of 1 lemon
- 1/4 cup fresh parsley, chopped
For the Linguine
- 8 ounces linguine or your preferred pasta
- Salt, for pasta water

Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Reserve about 1/2 cup of the pasta water, then drain the pasta and set aside.
Step 2: Sear the Shrimp
- Season the shrimp with salt and black pepper.
- In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat until the butter is melted and bubbling.
- Add the shrimp in a single layer and cook for about 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
Step 3: Make the Scampi Sauce
- In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and cook for about 1 minute, until fragrant.
- If you like a little heat, add the crushed red pepper flakes.
- Pour in the white wine, stirring to scrape up any browned bits from the bottom of the skillet.
- Add the lemon juice and lemon zest, and let the sauce simmer for 3-4 minutes, or until slightly reduced.
Step 4: Combine the Pasta and Shrimp
- Add the cooked linguine to the skillet with the scampi sauce, tossing to coat the pasta evenly.
- If the sauce is too thick, add a bit of the reserved pasta water, 1 tablespoon at a time, until you reach your desired consistency.
- Return the cooked shrimp to the skillet and toss to combine with the pasta and sauce.
Step 5: Add Finishing Touches
- Sprinkle the chopped fresh parsley over the pasta and shrimp, tossing again to distribute the flavors.
- Taste and adjust seasoning with salt and black pepper as needed.
Step 6: Serve and Garnish
- Divide the Shrimp Scampi Linguine among serving plates.
- Garnish with grated Parmesan cheese, extra lemon wedges, and additional chopped parsley if desired.
