  • 1/2 cup dry white wine (like Sauvignon Blanc or Pinot Grigio)
  • Juice of 1 lemon (about 2 tablespoons)
  • Zest of 1 lemon
  • 1/4 cup fresh parsley, chopped

For the Linguine

  • 8 ounces linguine or your preferred pasta
  • Salt, for pasta water

Garnishes (Optional)

  • Grated Parmesan cheese
  • Lemon wedges
  • Extra chopped parsley

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Reserve about 1/2 cup of the pasta water, then drain the pasta and set aside.

Step 2: Sear the Shrimp

  1. Season the shrimp with salt and black pepper.
  2. In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat until the butter is melted and bubbling.
  3. Add the shrimp in a single layer and cook for about 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.

Step 3: Make the Scampi Sauce

  1. In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and cook for about 1 minute, until fragrant.

  1. Add the cooked linguine to the skillet with the scampi sauce, tossing to coat the pasta evenly.
  2. If the sauce is too thick, add a bit of the reserved pasta water, 1 tablespoon at a time, until you reach your desired consistency.
  3. Return the cooked shrimp to the skillet and toss to combine with the pasta and sauce.

Step 5: Add Finishing Touches

  1. Sprinkle the chopped fresh parsley over the pasta and shrimp, tossing again to distribute the flavors.
  2. Taste and adjust seasoning with salt and black pepper as needed.

Step 6: Serve and Garnish

  1. Divide the Shrimp Scampi Linguine among serving plates.
  2. Garnish with grated Parmesan cheese, extra lemon wedges, and additional chopped parsley if desired.
