Creamed Peas

  • Author: Amelia
  • Total Time: 20 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

For the Creamed Peas:

  • 3 cups frozen peas (you can also use fresh peas if in season)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk (or heavy cream for a richer sauce)
  • ½ cup vegetable or chicken broth
  • Salt and pepper, to taste
  • 1 teaspoon sugar (optional, for added sweetness)
  • Pinch of ground nutmeg (optional, for added warmth)

For Garnish (Optional):

  • Chopped fresh parsley or dill
  • Grated Parmesan cheese

Instructions

Step 1: Prepare the Peas

1. Cook the Peas:

If using frozen peas, bring a medium pot of water to a boil. Add the frozen peas and cook for 2-3 minutes, just until they are tender but still bright green. Drain and set aside. If using fresh peas, blanch them for about 1-2 minutes until tender, then drain.

Step 2: Make the Cream Sauce

1. Melt the Butter:

In a large skillet or saucepan, melt the butter over medium heat. Once melted, add flour and whisk together, cooking for about 1-2 minutes to form a roux. This helps thicken the sauce and prevents it from tasting raw.

2. Add the Milk and Broth:

Slowly pour in the milk (or heavy cream) while whisking constantly to prevent lumps from forming. Follow with the vegetable or chicken broth, continuing to whisk until the mixture begins to thicken, which should take about 3-4 minutes.

3. Season the Sauce:

Once the sauce has thickened, season it with salt, pepper, and a pinch of nutmeg for extra warmth. If you like a slightly sweeter flavor, you can also add 1 teaspoon of sugar at this stage.

Step 3: Combine the Peas and Sauce

1. Add the Peas:

Add the cooked peas to the sauce and gently stir until they are evenly coated. Continue cooking for another 2-3 minutes until the peas are heated through and the sauce has reached your desired consistency.

2. Adjust Seasoning:

Taste the creamed peas and adjust the seasoning if needed. If the sauce is too thick, you can thin it out with a little more milk or broth. If it’s too thin, let it simmer for another minute or two until it thickens.

Step 4: Serve and Garnish

Transfer the creamed peas to a serving dish and garnish with a sprinkle of fresh parsley, dill, or Parmesan cheese if desired. Serve warm alongside your favorite main dishes.
