  • 1 pound ground beef (85% lean)
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning

  • Salt and black pepper, to taste

For the Sauce:

  • 1 1/2 cups heavy cream
  • 1 cup beef broth
  • 3/4 cup grated Parmesan cheese
  • 1 tablespoon all-purpose flour
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon garlic powder

For the Tortellini:

  • 12 ounces cheese tortellini (fresh or frozen)
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Additional Parmesan cheese, for topping

Instructions

Step 1: Prepare the Ingredients

Before you begin cooking, gather and prep all your ingredients. Mince the garlic, measure out the seasonings, and shred the Parmesan cheese. If you’re using fresh parsley, chop it finely.

Step 2: Brown the Beef

  1. Heat a large skillet over medium heat and add the ground beef. Break it up with a wooden spoon and cook until browned, about 5–7 minutes.
  2. Season the beef with onion powder, Italian seasoning, paprika, crushed red pepper flakes (if using), salt, and pepper. Stir well to combine.
  3. Once cooked, drain any excess grease and remove the beef from the skillet. Set aside.

Step 3: Build the Sauce Base

  1. Return the skillet to medium heat and melt the butter. Add the minced garlic and sauté for about 30 seconds until fragrant.
  2. Sprinkle the flour over the melted butter and whisk to form a roux. Cook the roux for 1 minute to eliminate the raw flour taste.
  3. Gradually pour in the beef broth, whisking continuously to prevent lumps. Follow with the heavy cream and garlic powder, whisking until smooth.

Step 4: Thicken the Sauce

  1. Bring the sauce to a gentle simmer and stir in the Parmesan cheese. Keep stirring until the cheese is fully melted and the sauce begins to thicken.

Step 5: Cook the Tortellini

  1. Add the tortellini directly into the sauce. Gently stir to coat the pasta evenly.
  2. Cover the skillet and cook for 5–7 minutes, or until the tortellini is tender. If using frozen tortellini, add an extra 2–3 minutes to the cooking time.

Step 6: Combine and Serve

  1. Return the cooked ground beef to the skillet and stir until everything is well combined. Allow the dish to heat through for 2–3 minutes.
  2. Remove from heat and garnish with fresh parsley and additional Parmesan cheese.
  3. Serve immediately and enjoy the creamy, cheesy goodness!
