For the Shrimp:
- 1 pound large shrimp, peeled and deveined

For the Pasta:
- 8 ounces linguine or fettuccine pasta
- 1 teaspoon salt (for pasta water)
For the Creamy Sauce:
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken or seafood broth
- 1/3 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
For Garnish:
- 1/4 cup fresh basil, chopped
- Extra Parmesan cheese, for sprinkling
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set it aside.
Step 2: Season and Cook the Shrimp
- In a medium bowl, toss the shrimp with paprika, garlic powder, red pepper flakes (if using), salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 2–3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
Step 3: Make the Creamy Sauce
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1–2 minutes, or until fragrant.
- Stir in the sun-dried tomatoes and cook for another minute to release their flavor.
- Pour in the heavy cream and broth, stirring to combine. Bring the mixture to a gentle simmer.
- Add the Parmesan cheese, Italian seasoning, and red pepper flakes. Stir until the cheese is melted and the sauce is smooth. Season with salt and black pepper to taste.
Step 4: Combine the Pasta and Shrimp
- Add the cooked pasta to the skillet, tossing it in the sauce to coat evenly. Add a splash of reserved pasta water if the sauce is too thick.
- Return the cooked shrimp to the skillet and toss gently to combine. Cook for 1–2 minutes to warm everything through.
Step 5: Garnish and Serve
- Transfer the pasta to serving plates or bowls.
- Garnish with fresh basil and a sprinkle of Parmesan cheese. Serve immediately and enjoy the creamy, flavorful goodness!
