For the Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder

For the Pasta:

  • 8 ounces linguine or fettuccine pasta
  • 1 teaspoon salt (for pasta water)

For the Creamy Sauce:

  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken or seafood broth
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste

For Garnish:

  • 1/4 cup fresh basil, chopped
  • Extra Parmesan cheese, for sprinkling

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set it aside.

Step 2: Season and Cook the Shrimp

  1. In a medium bowl, toss the shrimp with paprika, garlic powder, red pepper flakes (if using), salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 2–3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3: Make the Creamy Sauce

  1. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1–2 minutes, or until fragrant.
  2. Stir in the sun-dried tomatoes and cook for another minute to release their flavor.
  3. Pour in the heavy cream and broth, stirring to combine. Bring the mixture to a gentle simmer.
  4. Add the Parmesan cheese, Italian seasoning, and red pepper flakes. Stir until the cheese is melted and the sauce is smooth. Season with salt and black pepper to taste.

Step 4: Combine the Pasta and Shrimp

  1. Add the cooked pasta to the skillet, tossing it in the sauce to coat evenly. Add a splash of reserved pasta water if the sauce is too thick.
  2. Return the cooked shrimp to the skillet and toss gently to combine. Cook for 1–2 minutes to warm everything through.

Step 5: Garnish and Serve

  1. Transfer the pasta to serving plates or bowls.
  2. Garnish with fresh basil and a sprinkle of Parmesan cheese. Serve immediately and enjoy the creamy, flavorful goodness!
