For the Marinade:

  • 1 cup Dr Pepper
  • 2 chipotle peppers in adobo sauce, minced (adjust for spice preference)
  • 2 tablespoons adobo sauce (from the chipotle can)
  • 2 tablespoons lime juice (freshly squeezed)
  • 2 tablespoons olive oil
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tablespoon olive oil (for grilling)

For Garnish and Serving (Optional):

  • Fresh cilantro, chopped
  • Lime wedges
  • Sliced jalapeños

Instructions

Step 1: Prepare the Marinade

  1. In a mixing bowl, whisk together Dr Pepper, minced chipotle peppers, adobo sauce, lime juice, olive oil, honey, smoked paprika, garlic powder, onion powder, cumin, salt, and black pepper.
  2. Mix well to ensure all ingredients are combined and the flavors meld together.

Step 2: Marinate the Chicken

  1. Place the chicken breasts in a large zip-top bag or a shallow dish.
  2. Pour the marinade over the chicken, making sure each piece is well coated.
  3. Seal the bag (or cover the dish) and refrigerate for at least 2 hours, preferably up to 4 hours. This allows the flavors to fully absorb into the meat.

Step 3: Prepare the Grill

  1. Preheat the grill to medium-high heat (about 375–400°F).
  2. Lightly oil the grill grates with olive oil to prevent sticking.

Step 4: Grill the Chicken

  1. Remove the chicken from the marinade and let the excess drip off. Discard the used marinade.
  2. Place the chicken on the hot grill and cook for 6–8 minutes per side, or until the internal temperature reaches 165°F.
  3. Flip only once to achieve a nice caramelized crust without over-charring.
  4. If desired, baste with fresh marinade during the last few minutes of cooking for extra flavor.

Step 5: Rest and Serve

  1. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  2. Garnish with chopped cilantro, fresh lime wedges, and sliced jalapeños.
  3. Serve with your favorite sides and enjoy!
