For the Marinade:
- 1 cup Dr Pepper
- 2 chipotle peppers in adobo sauce, minced (adjust for spice preference)
- 2 tablespoons adobo sauce (from the chipotle can)
- 2 tablespoons lime juice (freshly squeezed)
- 2 tablespoons olive oil
- 1 tablespoon honey or brown sugar
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon ground cumin
- ½ teaspoon salt
- ½ teaspoon black pepper
For the Chicken:
- 4 boneless, skinless chicken breasts (or thighs)
- 1 tablespoon olive oil (for grilling)
For Garnish and Serving (Optional):
- Fresh cilantro, chopped
- Lime wedges
- Sliced jalapeños
Instructions
Step 1: Prepare the Marinade
- In a mixing bowl, whisk together Dr Pepper, minced chipotle peppers, adobo sauce, lime juice, olive oil, honey, smoked paprika, garlic powder, onion powder, cumin, salt, and black pepper.
- Mix well to ensure all ingredients are combined and the flavors meld together.
Step 2: Marinate the Chicken
- Place the chicken breasts in a large zip-top bag or a shallow dish.
- Pour the marinade over the chicken, making sure each piece is well coated.
- Seal the bag (or cover the dish) and refrigerate for at least 2 hours, preferably up to 4 hours. This allows the flavors to fully absorb into the meat.
Step 3: Prepare the Grill
- Preheat the grill to medium-high heat (about 375–400°F).
- Lightly oil the grill grates with olive oil to prevent sticking.
Step 4: Grill the Chicken
- Remove the chicken from the marinade and let the excess drip off. Discard the used marinade.
- Place the chicken on the hot grill and cook for 6–8 minutes per side, or until the internal temperature reaches 165°F.
- Flip only once to achieve a nice caramelized crust without over-charring.
- If desired, baste with fresh marinade during the last few minutes of cooking for extra flavor.
Step 5: Rest and Serve
- Remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Garnish with chopped cilantro, fresh lime wedges, and sliced jalapeños.
- Serve with your favorite sides and enjoy!
