Easy One Pot Creamy Tomato Pasta

For the Pasta:

  • 12 oz (340g) pasta (penne, fusilli, or spaghetti)
  • 1 tablespoon olive oil
  • 4 garlic cloves (minced)
  • 1 small onion (finely chopped)
  • 1 can (14 oz) crushed tomatoes
  • 3 cups water
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Optional Add-Ins:

  • 1 cup cooked chicken (shredded or diced)
  • 1 cup cooked shrimp
  • 1/2 cup frozen spinach (thawed and drained)
  • 1/2 cup mushrooms (sliced)

For Garnish:

  • Fresh basil leaves
  • Extra Parmesan cheese
  • Drizzle of olive oil

Instructions

Step 1: Prepare the Ingredients

  1. Gather and measure out all your ingredients. Finely chop the onion and mince the garlic to ensure even cooking.

Step 2: Sauté the Aromatics

  1. In a large, deep skillet or Dutch oven, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté for 2-3 minutes, until softened and translucent.
  3. Stir in the minced garlic and cook for another 30 seconds, or until fragrant.

Step 3: Add the Tomato Base

  1. Pour in the crushed tomatoes and stir to combine with the aromatics.
  2. Add the dried basil, oregano, red pepper flakes (if using), salt, and black pepper. Stir well to distribute the seasonings evenly.

Step 4: Cook the Pasta

  1. Add the dry pasta to the pot, followed by 3 cups of water. Stir to ensure the pasta is submerged in the liquid.
  2. Bring the mixture to a boil, then reduce the heat to medium-low. Cover the pot and simmer, stirring occasionally, for about 10-12 minutes, or until the pasta is cooked to al dente.

Step 5: Add the Cream and Cheese

  1. Once the pasta is cooked, reduce the heat to low and stir in the heavy cream.
  2. Add the grated Parmesan cheese and mix until the cheese has melted and the sauce is creamy.
  3. Taste the sauce and adjust the seasoning with more salt, pepper, or red pepper flakes, if needed.

Step 6: Optional Add-Ins

  1. If you’re adding protein or vegetables, stir them into the pot at this stage. Cook for an additional 2-3 minutes to heat everything through.

Step 7: Serve and Garnish

  1. Remove the pot from heat and divide the pasta among serving plates.
  2. Garnish with fresh basil leaves, extra Parmesan cheese, and a drizzle of olive oil for added flavor. Serve immediately and enjoy!
