Here’s everything you’ll need to make these delicious spinach balls:
- 2 cups cooked spinach, finely chopped (or 10 oz frozen spinach, thawed and drained)
- 1 cup breadcrumbs (plain or seasoned)
- 1/2 cup grated Parmesan cheese
- 2 large eggs, beaten
- 2 tablespoons unsalted butter, melted
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional, for added depth of flavor)
- 1/4 cup fresh parsley, finely chopped (optional, for garnish)
Instructions
- Prepare the spinach:
If using frozen spinach, thaw it completely and squeeze out as much moisture as possible using a clean kitchen towel or paper towels. If using fresh spinach, blanch it in boiling water for 1–2 minutes, then drain and chop finely. Set aside. - Combine the ingredients:
In a large mixing bowl, combine the cooked spinach, breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, black pepper, and nutmeg (if using). Mix until well incorporated. - Add the wet ingredients:
Pour in the beaten eggs and melted butter. Stir until the mixture comes together and forms a dough-like consistency. It should hold its shape when pressed into a ball. If the mixture feels too dry, add a tablespoon of water or milk. - Form the balls:
Using your hands or a small cookie scoop, form the mixture into balls about 1 inch in diameter. Place them on a baking sheet lined with parchment paper or a silicone baking mat. - Bake the spinach balls:
Preheat your oven to 375°F (190°C). Bake the spinach balls for 18–20 minutes, or until they’re golden brown and firm to the touch. - Cool and serve:
Allow the spinach balls to cool slightly before serving. Garnish with fresh parsley if desired, and enjoy warm with your favorite dipping sauce.
