Instructions
Step 1: Prepare the English Muffins
- Preheat your oven to 375°F (190°C).
- Arrange the split English muffins cut-side up on a baking sheet lined with parchment paper.
- Brush each muffin half with olive oil or melted butter to create a crispy base.
Step 2: Cook the Eggs
- In a bowl, whisk together the eggs, milk, salt, and black pepper.
- Heat a non-stick skillet over medium heat and scramble the egg mixture until just set. Remove from heat and set aside.
Step 3: Assemble the Pizzas
- Sprinkle a layer of mozzarella and cheddar cheese over each English muffin half.
- Divide the scrambled eggs evenly among the muffins, spreading them out to cover the surface.
- Add toppings such as crumbled bacon, diced bell peppers, and green onions. Sprinkle with additional cheese if desired.
Step 4: Bake the Pizzas
- Bake the assembled English muffin pizzas in the preheated oven for 10–12 minutes, or until the cheese is melted and bubbly.
- For extra crispiness, broil the pizzas for 1–2 minutes, keeping a close eye to prevent burning.
Step 5: Garnish and Serve
- Remove the pizzas from the oven and let them cool slightly.
- Garnish with optional add-ons like avocado slices, fresh herbs, or a drizzle of hot sauce. Serve warm and enjoy!
