Instructions
1. Separate the Eggs
Carefully separate the eggs, placing the yolks in one bowl and the whites in another. Ensure there is no yolk in the whites, as this will prevent them from whipping properly.
2. Prepare the Egg Whites
Add the cream of tartar to the egg whites. Using a hand mixer or stand mixer, beat the egg whites on medium-high speed until stiff peaks form. This step is essential for creating the fluffy, cloud-like texture of the bread. Stiff peaks mean the whites should hold their shape when you lift the beaters.
3. Mix the Yolks and Cottage Cheese
In the bowl with the egg yolks, add the cottage cheese and a pinch of salt. Mix well until the mixture is smooth. For an ultra-smooth texture, you can blend the cottage cheese with a hand blender before mixing it with the yolks.
4. Fold the Mixtures Together
Gently fold the yolk mixture into the beaten egg whites. Use a spatula and a light hand to preserve as much air as possible in the mixture. Fold until the ingredients are just combined; overmixing will deflate the batter.
5. Preheat the Oven and Prepare the Baking Sheet
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat. Lightly grease the surface to prevent sticking.
6. Shape the Cloud Bread
Using a large spoon, scoop the batter onto the prepared baking sheet, forming 8 mounds about 3-4 inches in diameter. You can use the back of the spoon to gently shape them into rounds.
7. Add Toppings (Optional)
Sprinkle your chosen toppings, such as sesame seeds, everything bagel seasoning, or grated cheese, onto the tops of the rounds before baking.
8. Bake the Cloud Bread
Bake in the preheated oven for 25-30 minutes, or until the cloud bread is golden brown and feels firm to the touch. Avoid opening the oven during baking, as this can cause the bread to deflate.
9. Cool and Serve
Allow the cloud bread to cool on the baking sheet for 5-10 minutes, then transfer to a wire rack to cool completely. Serve immediately or store for later use.
