  • Author: Amelia
  • Total Time: 1 hour 45 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

For the Turkey

  • 3-pound boneless turkey breast (halal-certified)
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste

For the Garlic Butter

  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
  • 1 teaspoon dried rosemary or 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon paprika (optional, for color)
  • Zest of 1 lemon
  • 1 tablespoon fresh parsley, chopped

Optional Vegetables (for Roasting)

  • 1 pound baby potatoes, halved
  • 2 large carrots, cut into chunks
  • 1 onion, quartered
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste

Optional Garnishes

  • Fresh parsley, chopped
  • Lemon wedges

Instructions

Step 1: Prepare the Turkey Breast

  1. Preheat your oven to 375°F (190°C). Line a roasting pan with foil or parchment paper for easy cleanup.
  2. Pat the turkey breast dry with paper towels to ensure the skin gets crispy. Season the turkey generously with salt and black pepper on all sides.

Step 2: Make the Garlic Butter

  1. In a small bowl, combine the softened butter, minced garlic, thyme, rosemary, paprika (if using), lemon zest, and parsley. Mix until well combined.
  2. Rub the garlic butter mixture all over the turkey breast, ensuring it’s evenly coated. Spread some butter under the skin if possible, for extra flavor.

Step 3: Add Vegetables (Optional)

  1. If using vegetables, toss the potatoes, carrots, and onions with olive oil, salt, and black pepper in a bowl.
  2. Arrange the vegetables in the roasting pan around the turkey breast, ensuring they’re spread out in a single layer for even cooking.

Step 4: Roast the Turkey

  1. Place the turkey breast in the center of the roasting pan. Roast in the preheated oven for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) when measured in the thickest part.
  2. Baste the turkey with the pan juices every 20-30 minutes to enhance flavor and keep it moist.

Step 5: Rest the Turkey

  1. Remove the turkey breast from the oven and tent it loosely with foil. Let it rest for 15 minutes to allow the juices to redistribute, resulting in a juicier turkey.

Step 6: Serve and Garnish

  1. Slice the turkey breast into thick slices and arrange them on a serving platter.
  2. Garnish with fresh parsley and lemon wedges. Serve with the roasted vegetables or your favorite sides.
