- 1 teaspoon paprika (optional, for color)
- Zest of 1 lemon
- 1 tablespoon fresh parsley, chopped
Optional Vegetables (for Roasting)
- 1 pound baby potatoes, halved
- 2 large carrots, cut into chunks
- 1 onion, quartered
- 2 tablespoons olive oil
- Salt and black pepper, to taste
Optional Garnishes
- Fresh parsley, chopped
- Lemon wedges
Instructions
Step 1: Prepare the Turkey Breast
- Preheat your oven to 375°F (190°C). Line a roasting pan with foil or parchment paper for easy cleanup.
- Pat the turkey breast dry with paper towels to ensure the skin gets crispy. Season the turkey generously with salt and black pepper on all sides.
Step 2: Make the Garlic Butter
- In a small bowl, combine the softened butter, minced garlic, thyme, rosemary, paprika (if using), lemon zest, and parsley. Mix until well combined.
- Rub the garlic butter mixture all over the turkey breast, ensuring it’s evenly coated. Spread some butter under the skin if possible, for extra flavor.
Step 3: Add Vegetables (Optional)
- If using vegetables, toss the potatoes, carrots, and onions with olive oil, salt, and black pepper in a bowl.
- Arrange the vegetables in the roasting pan around the turkey breast, ensuring they’re spread out in a single layer for even cooking.
Step 4: Roast the Turkey
- Place the turkey breast in the center of the roasting pan. Roast in the preheated oven for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) when measured in the thickest part.
- Baste the turkey with the pan juices every 20-30 minutes to enhance flavor and keep it moist.
Step 5: Rest the Turkey
- Remove the turkey breast from the oven and tent it loosely with foil. Let it rest for 15 minutes to allow the juices to redistribute, resulting in a juicier turkey.
Step 6: Serve and Garnish
- Slice the turkey breast into thick slices and arrange them on a serving platter.
- Garnish with fresh parsley and lemon wedges. Serve with the roasted vegetables or your favorite sides.
