For the Chicken Bites:
- 1 ½ pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
For the Garlic Butter Sauce:
- 4 garlic cloves, minced
- 3 tablespoons unsalted butter
- 1 teaspoon Italian seasoning (optional)
- ¼ teaspoon red pepper flakes (optional, for a bit of heat)
- 2 tablespoons chopped fresh parsley (plus extra for garnish)
- 1 tablespoon lemon juice (optional, for brightness)
Instructions
Step 1: Prepare the Chicken
- Rinse the chicken under cold water and pat it dry with paper towels. Cut into evenly sized, bite-sized pieces to ensure even cooking.
- In a large bowl, season the chicken pieces with salt, pepper, smoked paprika, and garlic powder. Toss to coat evenly.
Step 2: Sear the Chicken
- Heat a large skillet or nonstick pan over medium-high heat. Add the olive oil and let it heat until shimmering.
- Add the chicken pieces in a single layer, ensuring they aren’t overcrowded (cook in batches if necessary).
- Sear the chicken for 3–4 minutes on one side without moving, allowing a golden crust to form. Flip the pieces and cook for another 3–4 minutes, or until fully cooked (internal temperature of 165°F/74°C).
- Remove the chicken from the skillet and set aside on a plate.
Step 3: Make the Garlic Butter Sauce
- In the same skillet, reduce the heat to medium. Add the butter and let it melt.
- Stir in the minced garlic and cook for 1–2 minutes, or until fragrant (be careful not to burn the garlic).
- Add the Italian seasoning and red pepper flakes, stirring to combine.
Step 4: Combine the Chicken and Sauce
- Return the cooked chicken bites to the skillet and toss them in the garlic butter sauce until fully coated.
- Stir in the chopped parsley and lemon juice (if using) for a fresh, vibrant finish.
Step 5: Serve and Garnish
- Transfer the Garlic Butter Chicken Bites to a serving dish and garnish with extra parsley.
- Serve immediately with your choice of sides or as an appetizer. Enjoy!
