  • 2 tablespoons unsalted butter

For the Garlic Butter Sauce:

  • 4 garlic cloves, minced
  • 3 tablespoons unsalted butter
  • 1 teaspoon Italian seasoning (optional)
  • ¼ teaspoon red pepper flakes (optional, for a bit of heat)
  • 2 tablespoons chopped fresh parsley (plus extra for garnish)
  • 1 tablespoon lemon juice (optional, for brightness)

Instructions

Step 1: Prepare the Chicken

  1. Rinse the chicken under cold water and pat it dry with paper towels. Cut into evenly sized, bite-sized pieces to ensure even cooking.
  2. In a large bowl, season the chicken pieces with salt, pepper, smoked paprika, and garlic powder. Toss to coat evenly.

Step 2: Sear the Chicken

  1. Heat a large skillet or nonstick pan over medium-high heat. Add the olive oil and let it heat until shimmering.
  2. Add the chicken pieces in a single layer, ensuring they aren’t overcrowded (cook in batches if necessary).
  3. Sear the chicken for 3–4 minutes on one side without moving, allowing a golden crust to form. Flip the pieces and cook for another 3–4 minutes, or until fully cooked (internal temperature of 165°F/74°C).
  4. Remove the chicken from the skillet and set aside on a plate.

Step 3: Make the Garlic Butter Sauce

  1. In the same skillet, reduce the heat to medium. Add the butter and let it melt.
  2. Stir in the minced garlic and cook for 1–2 minutes, or until fragrant (be careful not to burn the garlic).
  3. Add the Italian seasoning and red pepper flakes, stirring to combine.

Step 4: Combine the Chicken and Sauce

  1. Return the cooked chicken bites to the skillet and toss them in the garlic butter sauce until fully coated.
  2. Stir in the chopped parsley and lemon juice (if using) for a fresh, vibrant finish.

Step 5: Serve and Garnish

  1. Transfer the Garlic Butter Chicken Bites to a serving dish and garnish with extra parsley.
