  • 810 wooden or metal skewers
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Garlic Parmesan Coating:

  • 1/4 cup unsalted butter
  • 4 garlic cloves, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon fresh parsley, finely chopped
  • 1/2 teaspoon garlic powder (optional, for extra garlic flavor)
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)

For Garnish:

  • Extra Parmesan cheese for sprinkling
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving

Special Equipment:

  • Grill or Grill Pan (for cooking the skewers)
  • Pastry Brush (for coating the skewers with the garlic butter sauce)

Instructions

Step 1: Prepare the Chicken Marinade

1. Cut the Chicken:

Start by cutting your chicken breasts or thighs into bite-sized pieces, about 1 to 1.5 inches in size. This ensures that they cook evenly and remain tender on the grill.

2. Marinate the Chicken:

In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, dried basil, salt, and pepper. Add the chicken pieces to the marinade and toss until they’re evenly coated. Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).

Step 2: Prepare the Skewers

1. Soak Wooden Skewers (if using):

If you’re using wooden skewers, soak them in water for about 20-30 minutes before grilling to prevent them from burning on the grill.

2. Skewer the Chicken:

Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece to ensure even cooking. If you’re using metal skewers, there’s no need to soak them beforehand.

Step 3: Make the Garlic Parmesan Coating

1. Melt the Butter:

In a small saucepan, melt 1/4 cup of unsalted butter over medium heat. Once melted, add the minced garlic and sauté for 1-2 minutes, stirring constantly until the garlic is fragrant and lightly golden. Be careful not to burn the garlic.

2. Add Parmesan and Seasonings:

Remove the saucepan from heat and stir in the grated Parmesan cheese, chopped parsley, and red pepper flakes (if using). You can also add garlic powder for an extra punch of garlic flavor. Mix until the cheese has melted slightly into the butter, forming a rich, cheesy sauce.

3. Set Aside the Sauce:

Keep the garlic Parmesan sauce warm while you grill the chicken skewers. You’ll use it to coat the skewers as soon as they come off the grill.

Step 4: Grill the Chicken Skewers

1. Preheat the Grill:

Preheat your grill (or grill pan) to medium-high heat, about 400°F (200°C). Make sure the grates are clean and lightly oiled to prevent the chicken from sticking.

2. Grill the Skewers:

Place the chicken skewers on the grill and cook for 4-5 minutes on each side, turning occasionally, until the chicken is fully cooked through. The internal temperature of the chicken should reach 165°F (75°C). Be careful not to overcook the chicken to keep it juicy and tender.

3. Baste with Garlic Parmesan Sauce:

As soon as the skewers come off the grill, brush them generously with the warm garlic Parmesan sauce using a pastry brush. The sauce will melt into the chicken, coating each piece with a delicious layer of garlicky, cheesy goodness.

Step 5: Garnish and Serve

1. Garnish with Extra Parmesan:

Sprinkle the skewers with a little extra Parmesan cheese and some freshly chopped parsley for a burst of freshness and color.

2. Serve with Lemon Wedges:

Serve the skewers with lemon wedges on the side for a bright, zesty finish that complements the richness of the garlic Parmesan sauce.

3. Enjoy Warm:

These Garlic Parmesan Chicken Skewers are best enjoyed warm, straight off the grill. Serve them as an appetizer, main course, or part of a larger meal with your favorite side dishes.
