  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions

Step 1: Prepare the Brussels Sprouts

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Trim the ends of the Brussels sprouts and remove any outer leaves that are yellow or damaged. Slice each sprout in half lengthwise to ensure even cooking.

Step 2: Season the Brussels Sprouts

  1. In a large mixing bowl, toss the halved Brussels sprouts with olive oil, garlic, salt, pepper, and paprika (if using). Mix well to ensure each piece is evenly coated.
  2. Add half of the Parmesan cheese to the bowl and toss again. The cheese will adhere to the sprouts and create a crispy, golden crust during roasting.

Step 3: Roast the Brussels Sprouts

  1. Spread the Brussels sprouts out in a single layer on the prepared baking sheet, cut side down. This ensures maximum contact with the hot surface, leading to better caramelization.
  2. Roast in the preheated oven for 20-25 minutes, flipping them halfway through to ensure even browning.

Step 4: Add More Parmesan and Serve

  1. During the last 5 minutes of roasting, sprinkle the remaining Parmesan cheese over the Brussels sprouts.
  2. Remove from the oven once the sprouts are crispy and golden. Transfer to a serving dish and garnish with fresh parsley before serving.
