Ingredients
Scale
- 1 pound Brussels sprouts, trimmed and halved
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika (optional)
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish
Instructions
Step 1: Prepare the Brussels Sprouts
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
- Trim the ends of the Brussels sprouts and remove any outer leaves that are yellow or damaged. Slice each sprout in half lengthwise to ensure even cooking.
Step 2: Season the Brussels Sprouts
- In a large mixing bowl, toss the halved Brussels sprouts with olive oil, garlic, salt, pepper, and paprika (if using). Mix well to ensure each piece is evenly coated.
- Add half of the Parmesan cheese to the bowl and toss again. The cheese will adhere to the sprouts and create a crispy, golden crust during roasting.
Step 3: Roast the Brussels Sprouts
- Spread the Brussels sprouts out in a single layer on the prepared baking sheet, cut side down. This ensures maximum contact with the hot surface, leading to better caramelization.
- Roast in the preheated oven for 20-25 minutes, flipping them halfway through to ensure even browning.
Step 4: Add More Parmesan and Serve
- During the last 5 minutes of roasting, sprinkle the remaining Parmesan cheese over the Brussels sprouts.
- Remove from the oven once the sprouts are crispy and golden. Transfer to a serving dish and garnish with fresh parsley before serving.
