Instructions
Step 1: Prepare the Marinade
- In a medium bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, and chili flakes (if using). Adjust sweetness or saltiness to taste.
Step 2: Marinate the Chicken
- Pat the chicken thighs dry with paper towels and season lightly with salt and pepper.
- Place the chicken in a large resealable bag or shallow dish. Pour the marinade over the chicken, ensuring it’s evenly coated.
- Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.
Step 3: Preheat the Oven
- Preheat your oven to 400°F (200°C). Line a baking dish or sheet pan with parchment paper or foil for easy cleanup.
Step 4: Arrange the Chicken
- Remove the chicken from the marinade, letting excess drip off. Reserve the marinade for basting.
- Arrange the chicken thighs skin-side up on the prepared baking dish, ensuring they are not crowded.
Step 5: Bake the Chicken
- Bake the chicken in the preheated oven for 40-45 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part.
- During the last 15 minutes of cooking, baste the chicken with the reserved marinade for added flavor and a glossy finish.
Step 6: Broil for Crispness (Optional)
- For extra crispy skin, switch the oven to broil for the last 2-3 minutes of cooking. Keep a close eye to prevent burning.
Step 7: Garnish and Serve
- Remove the chicken from the oven and let it rest for 5 minutes. Garnish with chopped cilantro, green onions, or sesame seeds, if desired.
- Serve hot with your choice of sides.
