  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup vegetable oil (for frying)

For the Marinara Sauce:

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar (optional, to balance acidity)

For Topping:

  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil (for garnish)

Instructions

Step 1: Prepare the Chicken

  1. Flatten the chicken breasts – Place each chicken breast between two pieces of plastic wrap and pound them to about ½-inch thickness using a meat mallet or rolling pin. This ensures even cooking.
  2. Season the chicken – Sprinkle both sides of each chicken breast with salt, black pepper, and red pepper flakes (if using).

Step 2: Set Up the Breading Station

  1. Prepare three separate bowls:
    • Bowl 1: Add the flour.
    • Bowl 2: Whisk together the eggs and water.
    • Bowl 3: Mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, and dried oregano.
  2. Coat each chicken breast – Dredge each piece in flour (shaking off excess), then dip into the egg mixture, and finally coat with the breadcrumb mixture, pressing gently to adhere.

Step 3: Fry the Chicken

  1. Heat ½ cup vegetable oil in a large skillet over medium-high heat.
  2. Add the breaded chicken breasts and cook for 3-4 minutes per side until golden brown and crispy.
  3. Transfer to a paper towel-lined plate to drain excess oil.

Step 4: Prepare the Marinara Sauce

  1. In a saucepan, heat 2 tablespoons olive oil over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Stir in crushed tomatoes, dried basil, dried oregano, salt, black pepper, and sugar.
  4. Simmer on low heat for 10 minutes, stirring occasionally.

Step 5: Assemble and Bake

  1. Preheat oven to 400°F (200°C).
  2. Spread a layer of marinara sauce in a baking dish.
  3. Place the fried chicken breasts in the dish and top each with more marinara sauce.
  4. Sprinkle mozzarella and Parmesan cheese generously over the chicken.
  5. Bake for 10-12 minutes until the cheese is melted and bubbly.

Step 6: Garnish and Serve

  1. Remove from the oven and sprinkle fresh basil on top.
  2. Serve immediately with your favorite side dishes.
