Ingredients
Scale
For the chicken:
- 4 boneless, skinless chicken breasts or thighs (about 1 1/2 pounds)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
For the peach glaze:
- 2 ripe peaches, peeled and diced (or 1 1/2 cups canned peaches, drained)
- 1/4 cup honey
- 1/4 cup peach preserves
- 2 tablespoons apple cider vinegar
- 2 jalapeños, seeded and finely diced (adjust to taste)
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon grated fresh ginger (optional, for depth)
Optional garnishes:
- Fresh peach slices
- Sliced jalapeños
- Fresh cilantro leaves
Instructions
Step 1: Prepare the Chicken
- Pat the chicken breasts or thighs dry with paper towels.
- Season both sides of the chicken with salt, black pepper, and garlic powder. This simple seasoning ensures a flavorful base for the dish.
Step 2: Sear the Chicken (Optional)
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the chicken and sear for 2–3 minutes per side until golden brown. This step locks in the juices and adds a nice crust to the chicken.
Step 3: Make the Peach Glaze
- In a medium saucepan, combine the diced peaches, honey, peach preserves, apple cider vinegar, diced jalapeños, minced garlic, soy sauce, and grated ginger (if using).
- Bring the mixture to a simmer over medium heat. Stir occasionally, breaking down the peaches with the back of a spoon or a potato masher. Simmer for 5–7 minutes until the mixture thickens into a glossy glaze. Remove from heat.
Step 4: Combine and Cook
- For Baking: Preheat your oven to 375°F. Transfer the seared chicken to a baking dish. Pour the peach glaze over the chicken, ensuring each piece is evenly coated. Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F.
- For Grilling: Preheat your grill to medium heat. Brush the chicken with the peach glaze and grill for 5–7 minutes per side, basting with additional glaze during cooking.
- For Stovetop: Add the peach glaze directly to the skillet with the seared chicken. Reduce the heat to low and simmer, spooning the glaze over the chicken, for 10–15 minutes until cooked through.
Step 5: Garnish and Serve
- Transfer the cooked chicken to a serving platter. Spoon extra peach glaze over the top.
- Garnish with fresh peach slices, jalapeño rounds, and a sprinkle of cilantro for a fresh, vibrant finish.
- Serve immediately with your favorite sides, such as rice, roasted vegetables, or a crisp salad.
