Instructions
Step 1: Prepare the Turkey Breast
- Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking dish with foil for easy cleanup.
 - Season the Turkey: Pat the turkey breast dry with paper towels. Rub it with olive oil, then season all over with salt, pepper, garlic powder, smoked paprika, and thyme.
 - Sear the Turkey (Optional): For extra flavor and a golden crust, heat a large skillet over medium-high heat and sear the turkey breast for 2-3 minutes on each side. Transfer to the prepared baking dish.
 
Step 2: Make the Pomegranate Glaze

 - Simmer and Reduce: Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer for 10-15 minutes, stirring occasionally, until the glaze thickens and reduces to about half its original volume. Remove from heat and let cool slightly.
 
Step 3: Roast the Turkey Breast

 - Roast: Place the turkey breast in the oven and roast for 1 hour to 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C). Baste with additional glaze every 20 minutes for maximum flavor and a shiny finish.
 - Tent and Rest: Remove the turkey from the oven, tent it loosely with foil, and let it rest for 10 minutes to allow the juices to redistribute.
 
Step 4: Garnish and Serve
- Slice and Garnish: Slice the turkey breast and arrange it on a platter. Drizzle with any remaining glaze and garnish with pomegranate arils, fresh rosemary sprigs, and orange slices for a festive touch.
