Kofta Kebabs

  • Author: Amelia
  • Total Time: 1 hour 5 minutes
  • Yield: 6-8 kebabs 1x

Ingredients

Scale

For the Kofta Kebabs

  • 1 pound ground beef (85% lean)
  • ½ pound ground lamb
  • 1 small onion, finely grated or minced
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh cilantro, chopped (optional)
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground allspice
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground black pepper
  • 1 teaspoon salt
  • ¼ teaspoon cayenne pepper (optional, for heat)
  • 1 tablespoon olive oil (for brushing)

For Serving (Optional)

  • Pita bread or flatbread
  • Fresh salad (like tabbouleh or fattoush)
  • Garlic sauce or tahini sauce
  • Sliced cucumber, tomato, and red onion
  • Lemon wedges for garnish

Instructions

Step 1: Prepare the Meat Mixture

  1. In a large mixing bowl, combine the ground beef and ground lamb. The combination of beef and lamb provides a balanced flavor and juicy texture, but you can use only beef if you prefer.
  2. Add the grated or minced onion, chopped parsley, chopped cilantro (if using), and minced garlic to the meat. These fresh ingredients add flavor and help keep the kebabs moist.
  3. Sprinkle the cumin, allspice, cinnamon, black pepper, salt, and cayenne pepper (if using) over the meat mixture. These spices give the kebabs their signature Middle Eastern flavor profile.
  4. Use your hands to mix the ingredients thoroughly until well combined. Be careful not to overwork the meat, as this can make the kebabs dense and tough.

Step 2: Shape the Kebabs

  1. Divide the meat mixture into 6-8 equal portions, depending on your desired kebab size.
  2. Take one portion of the meat mixture and shape it around a metal or wooden skewer, pressing it firmly to form an even, elongated shape around the skewer. Aim for a thickness of about 1 inch, as this will help the kebabs cook evenly.
  3. Repeat with the remaining portions, ensuring each kebab is shaped consistently for even cooking.
  4. Place the kebabs on a tray, cover with plastic wrap, and refrigerate for at least 30 minutes. This helps the flavors meld and makes the kebabs easier to handle when grilling.

Step 3: Grill the Kebabs

  1. Preheat your grill to medium-high heat (about 400°F/200°C). If using a charcoal grill, allow the coals to become white-hot before cooking.
  2. Brush each kebab lightly with olive oil to prevent sticking and to enhance browning.
  3. Place the skewers on the grill and cook for about 3-4 minutes per side, turning occasionally, until the kebabs are browned and cooked through. The internal temperature should reach 160°F (71°C) for fully cooked meat.
  4. Once done, remove the kebabs from the grill and let them rest for a few minutes.

Step 4: Serve the Kebabs

  1. Serve the Kofta Kebabs with warm pita bread, a fresh salad, and a side of garlic sauce or tahini sauce. The sauces add a creamy, tangy flavor that complements the spiced meat.
  2. Garnish with sliced cucumber, tomato, red onion, and a few lemon wedges for added freshness.
  3. Enjoy your flavorful, juicy Kofta Kebabs while they’re hot!
