  • Author: Amelia
  • Total Time: Approximately 1 hour 55 minutes
  • Yield: 16 bars 1x

Ingredients

Scale

For the Crust

  • 1 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt

For the Pecan Filling

  • 3 large eggs
  • 1 cup light corn syrup
  • 1 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • 1/4 teaspoon salt
  • 2 cups chopped pecans

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal later.

Step 2: Make the Crust

  • In a large mixing bowl, cream together the softened butter, flour, powdered sugar, and salt until the mixture resembles coarse crumbs.
  • Press the mixture evenly into the bottom of the prepared baking dish to form a crust.
  • Bake for 15 minutes, or until lightly golden. Remove from the oven and set aside to cool slightly.

Step 3: Prepare the Filling

  • In another bowl, whisk together the eggs, corn syrup, brown sugar, vanilla extract, melted butter, and salt until smooth and well combined.
  • Stir in the chopped pecans, ensuring they are evenly distributed throughout the mixture.

Step 4: Assemble and Bake

  • Pour the pecan filling over the pre-baked crust, spreading it out evenly.
  • Return the baking dish to the oven and bake for 35–40 minutes, or until the filling is set and slightly puffed.

Step 5: Cool and Slice

  • Allow the bars to cool completely in the pan, about 1 hour. This helps the filling set, making it easier to slice cleanly.
  • Use the parchment paper overhang to lift the bars out of the pan. Slice into 16 squares or rectangles and serve.
