Ingredients
Scale
For the Crust
- 1 cup unsalted butter, softened
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
For the Pecan Filling
- 3 large eggs
- 1 cup light corn syrup
- 1 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, melted
- 1/4 teaspoon salt
- 2 cups chopped pecans
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal later.
Step 2: Make the Crust
- In a large mixing bowl, cream together the softened butter, flour, powdered sugar, and salt until the mixture resembles coarse crumbs.
- Press the mixture evenly into the bottom of the prepared baking dish to form a crust.
- Bake for 15 minutes, or until lightly golden. Remove from the oven and set aside to cool slightly.
Step 3: Prepare the Filling
- In another bowl, whisk together the eggs, corn syrup, brown sugar, vanilla extract, melted butter, and salt until smooth and well combined.
- Stir in the chopped pecans, ensuring they are evenly distributed throughout the mixture.
Step 4: Assemble and Bake
- Pour the pecan filling over the pre-baked crust, spreading it out evenly.
- Return the baking dish to the oven and bake for 35–40 minutes, or until the filling is set and slightly puffed.
Step 5: Cool and Slice
- Allow the bars to cool completely in the pan, about 1 hour. This helps the filling set, making it easier to slice cleanly.
- Use the parchment paper overhang to lift the bars out of the pan. Slice into 16 squares or rectangles and serve.
