Ingredients
Scale
For the Chicken Bites:
- 1 1/2 pounds chicken breast, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Lemon Garlic Butter Sauce:
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- Juice of 1 large lemon (about 3 tablespoons)
- Zest of 1 lemon
- 1/4 teaspoon red pepper flakes (optional, for heat)
- 2 tablespoons fresh parsley, chopped
Instructions
Step 1: Prepare the Chicken
- Pat the chicken pieces dry with paper towels to ensure a good sear.
- In a medium bowl, toss the chicken with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
Step 2: Sear the Chicken
- Heat a large skillet over medium-high heat. Add a drizzle of olive oil to the pan.
- Place the chicken pieces in a single layer in the skillet. Cook for 4–5 minutes on one side without moving to develop a golden-brown crust.
- Flip the chicken pieces and cook for another 3–4 minutes, or until fully cooked and no longer pink in the center. Remove the chicken from the skillet and set aside.
Step 3: Make the Lemon Garlic Butter Sauce
- In the same skillet, reduce the heat to medium. Add the butter and let it melt.
- Stir in the minced garlic and cook for 1–2 minutes, or until fragrant.
- Add the lemon juice, lemon zest, and red pepper flakes (if using). Stir to combine and let the sauce simmer for 1–2 minutes.
Step 4: Combine the Chicken and Sauce
- Return the cooked chicken bites to the skillet and toss them in the sauce until evenly coated.
- Cook for an additional 2–3 minutes, allowing the chicken to absorb the flavors.
Step 5: Serve
- Garnish with fresh parsley and serve immediately. Pair with rice, pasta, or roasted vegetables for a complete meal.
