For the Summer Rolls:

  • 8 rice paper wrappers
  • 8 large lettuce leaves (such as butter lettuce, romaine, or green leaf lettuce)
  • 1 cup cooked shrimp, peeled and sliced in half lengthwise (or cooked chicken, tofu, or beef)
  • 1 cup cooked vermicelli rice noodles
  • 1/2 cup shredded carrots
  • 1/2 cup julienned cucumber
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh Thai basil leaves

For the Peanut Dipping Sauce:

  • 1/4 cup peanut butter
  • 2 tablespoons hoisin sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 12 tablespoons water (to thin the sauce)
  • 1 teaspoon sriracha (optional, for spice)

Instructions

Step 1: Prepare the Ingredients

Wash and pat dry the lettuce leaves. Slice the shrimp, vegetables, and herbs into thin, manageable pieces. Cook the vermicelli noodles according to the package instructions, then rinse with cold water and drain. Set everything aside in separate bowls for easy assembly.

Step 2: Make the Peanut Dipping Sauce

In a small mixing bowl, whisk together the peanut butter, hoisin sauce, soy sauce, rice vinegar, sesame oil, and sriracha (if using). Gradually add water, one tablespoon at a time, until the sauce reaches your desired consistency. Set aside.

Step 3: Soften the Rice Paper Wrappers

Fill a large shallow dish or pie pan with warm water. Submerge one rice paper wrapper in the water for 10-15 seconds, or until it becomes soft and pliable. Remove it and lay it flat on a clean kitchen towel or cutting board.

Step 4: Layer the Ingredients

Place a lettuce leaf in the center of the rice paper, leaving a 1-2 inch border around the edges. Layer a few slices of shrimp (or your chosen protein), a small handful of noodles, and an assortment of vegetables and herbs on top of the lettuce. Be careful not to overfill.

Step 5: Roll the Summer Roll

Fold the bottom edge of the rice paper up over the filling, then fold in the sides like an envelope. Roll tightly from the bottom to the top, ensuring the filling is secured. Repeat with the remaining rice paper wrappers and ingredients.

Step 6: Serve and Enjoy

Arrange the completed rolls on a platter. Serve with the peanut dipping sauce on the side. Garnish with additional herbs or sesame seeds for a decorative touch.
