  • 2 tablespoons capers, drained
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, torn
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried thyme or rosemary
  • 1 teaspoon red pepper flakes (optional, for spice)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil or line it with parchment paper for easy cleanup.

Step 2: Season the Fish

Pat the fish fillets dry with a paper towel to remove excess moisture. Place them evenly in the prepared baking dish. Drizzle with olive oil and lemon juice, then sprinkle with salt, black pepper, paprika, garlic, and dried oregano. Rub the seasonings gently into the fish to coat evenly.

Step 3: Prepare the Mediterranean Topping

In a medium mixing bowl, combine the halved cherry tomatoes, olives, capers, sliced red onion, and herbs (parsley and basil). Drizzle with extra virgin olive oil, sprinkle with dried thyme, and add a pinch of red pepper flakes if using. Toss everything together until evenly mixed.

Step 4: Top the Fish

Spoon the Mediterranean topping over the seasoned fish fillets, making sure to distribute it evenly. Add a few lemon slices on top for extra flavor.

Step 5: Bake

Transfer the baking dish to the preheated oven and bake for 15–20 minutes, or until the fish flakes easily with a fork and the tomatoes have softened. Cooking times may vary depending on the thickness of the fish fillets.

Step 6: Garnish and Serve

Remove the dish from the oven and let it cool for a minute. Garnish with additional fresh parsley, basil, and lemon wedges for a burst of freshness. Serve the baked fish with crusty bread, rice, or quinoa to soak up the flavorful juices.
