For the Steak:

  • 1 tsp salt

For the Onion Gravy:

  • 2 large yellow onions, thinly sliced
  • 3 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 3 cups beef broth (low-sodium preferred)
  • 1 tsp Worcestershire sauce
  • ½ tsp dried thyme
  • ½ tsp paprika
  • ½ tsp garlic powder
  • Salt and pepper to taste

  • Fresh parsley, chopped
  • Extra black pepper

Instructions

Step 1: Prepare the Steaks

  1. Remove the steaks from the refrigerator and pat them dry with paper towels. This helps achieve a good sear.
  2. Season both sides of each steak generously with salt, black pepper, garlic powder, and onion powder.

Step 2: Sear the Steaks

  1. Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Add the olive oil and let it heat until shimmering.
  2. Add the steaks to the pan, being careful not to overcrowd. Sear for 2-3 minutes per side, or until a deep, golden-brown crust forms.
  3. Remove the steaks from the pan and set them aside. They will finish cooking in the gravy later.

Step 3: Caramelize the Onions

  1. Reduce the heat to medium and add the butter to the same skillet. Once melted, add the sliced onions.
  2. Cook the onions, stirring occasionally, for 10-12 minutes, or until they’re golden brown and caramelized. Be patient—this step builds flavor.
  3. If the pan gets too dry, add a tablespoon of water or beef broth to deglaze it and keep the onions from burning.

Step 4: Make the Gravy

  1. Sprinkle the flour over the caramelized onions and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.
  2. Slowly pour in the beef broth, stirring constantly to prevent lumps.
  3. Add the Worcestershire sauce, dried thyme, paprika, garlic powder, and a pinch of salt and pepper. Bring the mixture to a simmer and cook for 3-5 minutes, or until the gravy thickens.

Step 5: Simmer the Steaks

  1. Return the seared steaks to the skillet, nestling them into the onion gravy. Reduce the heat to low.
  2. Cover the skillet and let the steaks simmer in the gravy for 8-10 minutes, or until they reach your desired level of doneness (use a meat thermometer for accuracy: 135°F for medium-rare, 145°F for medium).
  3. Taste the gravy and adjust the seasoning with additional salt or pepper if needed.

Step 6: Garnish and Serve

  1. Remove the steaks from the skillet and spoon the onion gravy generously over the top.
  2. Garnish with chopped parsley and a sprinkle of black pepper. Serve immediately with your choice of side dishes.
