For the Steak:
- 4 sirloin steaks (6–8 oz each), about 1-inch thick
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp onion powder
- 2 tbsp olive oil
For the Onion Gravy:
- 2 large yellow onions, thinly sliced
- 3 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 3 cups beef broth (low-sodium preferred)
- 1 tsp Worcestershire sauce
- ½ tsp dried thyme
- ½ tsp paprika
- ½ tsp garlic powder
- Salt and pepper to taste

- Fresh parsley, chopped
- Extra black pepper
Instructions
Step 1: Prepare the Steaks
- Remove the steaks from the refrigerator and pat them dry with paper towels. This helps achieve a good sear.
- Season both sides of each steak generously with salt, black pepper, garlic powder, and onion powder.
Step 2: Sear the Steaks
- Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Add the olive oil and let it heat until shimmering.
- Add the steaks to the pan, being careful not to overcrowd. Sear for 2-3 minutes per side, or until a deep, golden-brown crust forms.
- Remove the steaks from the pan and set them aside. They will finish cooking in the gravy later.
Step 3: Caramelize the Onions
- Reduce the heat to medium and add the butter to the same skillet. Once melted, add the sliced onions.
- Cook the onions, stirring occasionally, for 10-12 minutes, or until they’re golden brown and caramelized. Be patient—this step builds flavor.
- If the pan gets too dry, add a tablespoon of water or beef broth to deglaze it and keep the onions from burning.
Step 4: Make the Gravy
- Sprinkle the flour over the caramelized onions and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.
- Slowly pour in the beef broth, stirring constantly to prevent lumps.
- Add the Worcestershire sauce, dried thyme, paprika, garlic powder, and a pinch of salt and pepper. Bring the mixture to a simmer and cook for 3-5 minutes, or until the gravy thickens.
Step 5: Simmer the Steaks
- Return the seared steaks to the skillet, nestling them into the onion gravy. Reduce the heat to low.
- Cover the skillet and let the steaks simmer in the gravy for 8-10 minutes, or until they reach your desired level of doneness (use a meat thermometer for accuracy: 135°F for medium-rare, 145°F for medium).
- Taste the gravy and adjust the seasoning with additional salt or pepper if needed.
Step 6: Garnish and Serve
- Remove the steaks from the skillet and spoon the onion gravy generously over the top.
- Garnish with chopped parsley and a sprinkle of black pepper. Serve immediately with your choice of side dishes.
