Pancake Sausage on a Stick

  • Author: Amelia
  • Total Time: 20-22 minutes
  • Yield: Serves 4-6 (makes 8 pancake sausages on sticks) 1x

Ingredients

Scale

For the Pancake Sausage on a Stick:

  • 8 halal breakfast sausages (chicken, beef, or turkey)
  • 1 ½ cups pancake mix (store-bought or homemade)
  • 1 large egg
  • ¾ cup milk
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract (optional, for extra flavor)
  • 8 wooden skewers (popsicle sticks or bamboo skewers)
  • Vegetable oil, for frying

Optional Add-Ins:

  • Cheese: Add shredded cheddar or mozzarella cheese to the pancake batter for an extra savory surprise.
  • Maple syrup or honey: Serve alongside your pancake sausage sticks for dipping.
  • Cinnamon or nutmeg: Add a pinch of these spices to the pancake batter for a touch of warmth and flavor.

Instructions

Step 1: Cook the Sausages

Start by cooking the halal breakfast sausages in a skillet over medium heat for about 5-7 minutes, turning occasionally until they are fully cooked through and browned on all sides. Once cooked, transfer them to a plate lined with paper towels to drain any excess grease. Let the sausages cool slightly before inserting the sticks.

Step 2: Prepare the Pancake Batter

While the sausages are cooling, prepare the pancake batter. In a medium mixing bowl, combine the pancake mix, egg, milk, vegetable oil, and vanilla extract (if using). Whisk the mixture until smooth and free of lumps. The batter should be slightly thick but still pourable. If the batter seems too thick, add a little more milk to thin it out.

Step 3: Skewer the Sausages

Once the sausages have cooled enough to handle, insert a wooden skewer or popsicle stick into the center of each sausage, leaving enough of the stick exposed to act as a handle. Be gentle when inserting the sticks to avoid splitting the sausages.

Step 4: Heat the Oil

In a deep skillet or frying pan, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C). You can test the oil’s temperature by dropping a small amount of batter into the oil—if it sizzles and bubbles immediately, the oil is ready.

Step 5: Coat the Sausages in Pancake Batter

Once the oil is ready, dip each sausage on a stick into the pancake batter, making sure to coat it evenly. You may need to use a spoon to help cover the sausage completely. Let any excess batter drip off before carefully lowering the coated sausage into the hot oil.

Step 6: Fry the Pancake Sausage Sticks

Fry the pancake sausages in the hot oil, turning occasionally with tongs, for about 2-3 minutes per side or until golden brown and crispy. Be sure not to overcrowd the pan—fry the sausages in batches if necessary to ensure even cooking.

Once fried, transfer the pancake sausages to a plate lined with paper towels to drain off any excess oil.

Step 7: Serve and Enjoy

Serve your pancake sausages on a stick warm, with a side of maple syrup, honey, or fruit for dipping. They’re best enjoyed fresh, but they can also be reheated for a quick breakfast the next day.
