Instructions
Step 1: Prepare the Potato Mixture
- Boil and Mash: Boil the peeled potatoes in salted water until fork-tender. Drain and mash them while still warm until smooth and lump-free.
- Mix the Ingredients: In a mixing bowl, combine the mashed potatoes with mozzarella cheese, Parmesan cheese, butter, flour, garlic powder, onion powder, paprika, salt, black pepper, and parsley. Mix thoroughly until all ingredients are evenly distributed and the mixture holds together.
Step 2: Shape the Sticks
- Scoop about 2 tablespoons of the potato mixture and shape it into a stick or log approximately 3 inches long.
- Place the shaped sticks onto a baking sheet lined with parchment paper. Repeat until all the mixture is used.
- Refrigerate the sticks for 30 minutes to firm up. This step helps them maintain their shape during frying.
Step 3: Prepare the Coating
- Set up a breading station with three shallow bowls: one for flour, one for beaten eggs, and one for breadcrumbs mixed with Italian seasoning (if using).
- Coat each potato stick in flour, then dip it in the beaten eggs, and finally roll it in breadcrumbs until fully coated.
Step 4: Fry the Potato Cheese Sticks
- Heat oil in a deep skillet or frying pan to 350°F (175°C). Ensure there’s enough oil to fully submerge the sticks.
- Fry the potato sticks in batches for 2-3 minutes or until golden brown and crispy. Avoid overcrowding the pan to maintain even frying.
- Remove the sticks with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
Step 5: Serve
Serve the potato cheese sticks warm with your favorite dipping sauces, such as marinara, ranch, or garlic aioli. Garnish with extra parsley or grated Parmesan if desired.
