Instructions
Step 1: Prepare the Cookie Dough
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, oats, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.
- In a large mixing bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy, about 2–3 minutes.
- Add the pumpkin puree, egg, and vanilla extract to the butter mixture, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing to keep the cookies tender.
Step 2: Bake the Cookies
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Flatten the dough slightly with the back of a spoon to ensure even baking.
- Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Step 3: Make the Cream Cheese Filling
- In a medium bowl, beat the cream cheese and butter together until smooth and creamy.
- Add the vanilla extract and a pinch of salt, mixing well.
- Gradually add the powdered sugar, beating until light and fluffy. Adjust the consistency with a splash of milk if needed.
Step 4: Assemble the Cream Pies
- Match the cookies into pairs of similar sizes.
- Spread or pipe a generous layer of cream cheese filling onto the flat side of one cookie.
- Top with the second cookie, flat side down, pressing gently to create a sandwich. Repeat with the remaining cookies.
