For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 23 tablespoons ice water

For the Filling:

  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

For the Raspberry Topping:

  • 1 cup fresh raspberries (or raspberry jam)
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice

For Garnish:

  • Powdered sugar, for dusting
  • White chocolate drizzle (optional)

Instructions

Step 1: Prepare the Crust

  1. In a mixing bowl, combine the flour, sugar, and salt. Add the cold, cubed butter.
  2. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, one tablespoon at a time, until the dough comes together.
  4. Wrap the dough in plastic wrap and chill for 15 minutes.

Step 2: Preheat the Oven

Preheat your oven to 375°F (190°C) and line a muffin tin with mini liners or grease each cup lightly.

Step 3: Prepare the Filling

  1. In a bowl, beat the softened cream cheese until smooth.
  2. Add the powdered sugar and vanilla extract, mixing until well combined.

Step 4: Prepare the Raspberry Topping

  1. In a small saucepan, combine raspberries, sugar, and lemon juice.
  2. Cook over medium heat, stirring occasionally, until the mixture thickens (about 5 minutes). Set aside to cool.

Step 5: Assemble the Bites

  1. Roll the chilled dough on a floured surface to about 1/8-inch thickness.
  2. Use a round cookie cutter to cut circles and gently press each circle into the muffin cups.
  3. Spoon about 1 teaspoon of the cream cheese filling into each crust.
  4. Add a small dollop of the raspberry topping on top of the cream cheese.

Step 6: Bake

Bake the bites for 12–15 minutes, or until the crust is golden and the filling is set.

Step 7: Cool and Garnish

Allow the bites to cool completely before removing them from the tin. Dust with powdered sugar or drizzle with melted white chocolate before serving.
