- 1 pound large shrimp, peeled and deveined (halal-certified)
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced

- 1/2 cup chicken broth or vegetable broth (halal-certified)
- 1/4 cup fresh lemon juice (from about 2 lemons)
- 1/4 teaspoon black pepper
- Salt to taste
For Serving
- 1/4 cup fresh parsley, chopped
- 1/2 cup grated Parmesan cheese (optional, halal-certified)
- Cooked pasta (spaghetti, linguine, or fettuccine) or crusty bread
Instructions
Step 1: Prepare the Shrimp
- Rinse the shrimp under cold water and pat them dry with paper towels. Ensure they are fully thawed if using frozen shrimp.
- Lightly season the shrimp with salt and black pepper.
Step 2: Cook the Shrimp
- Heat a large skillet over medium heat and add 2 tablespoons of butter and the olive oil.
- Once the butter has melted, add the shrimp in a single layer. Cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
Step 3: Make the Garlic Butter Sauce
- In the same skillet, add the remaining 2 tablespoons of butter.
- Stir in the minced garlic and red pepper flakes (if using) and cook for 30 seconds to 1 minute, or until fragrant. Be careful not to burn the garlic.
- Add the chicken or vegetable broth and lemon juice, scraping the bottom of the pan with a wooden spoon to release any browned bits.
Step 4: Combine Shrimp and Sauce
- Return the cooked shrimp to the skillet and toss them in the garlic butter sauce. Cook for 2-3 minutes to allow the flavors to meld.
- Adjust the seasoning with additional salt, pepper, or lemon juice to taste.
Step 5: Serve and Garnish
- Serve the shrimp scampi over cooked pasta or with crusty bread to soak up the sauce.
- Garnish with chopped parsley and grated Parmesan cheese for an added touch of flavor and presentation.
