Instructions

Step 1: Prepare the Shrimp

  1. Rinse the shrimp under cold water and pat them dry with paper towels. Ensure they are fully thawed if using frozen shrimp.
  2. Lightly season the shrimp with salt and black pepper.

Step 2: Cook the Shrimp

  1. Heat a large skillet over medium heat and add 2 tablespoons of butter and the olive oil.
  2. Once the butter has melted, add the shrimp in a single layer. Cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3: Make the Garlic Butter Sauce

  1. In the same skillet, add the remaining 2 tablespoons of butter.
  2. Stir in the minced garlic and red pepper flakes (if using) and cook for 30 seconds to 1 minute, or until fragrant. Be careful not to burn the garlic.
  3. Add the chicken or vegetable broth and lemon juice, scraping the bottom of the pan with a wooden spoon to release any browned bits.

Step 4: Combine Shrimp and Sauce

  1. Return the cooked shrimp to the skillet and toss them in the garlic butter sauce. Cook for 2-3 minutes to allow the flavors to meld.
  2. Adjust the seasoning with additional salt, pepper, or lemon juice to taste.

  1. Serve the shrimp scampi over cooked pasta or with crusty bread to soak up the sauce.
