For the Dough:
- 3 ¾ cups (470g) all-purpose flour
- 2 ¼ teaspoons (1 packet) instant yeast
- 2 tablespoons unsweetened cocoa powder
- ¼ cup (50g) granulated sugar
- ½ teaspoon salt
- ¾ cup (180ml) warm milk (110°F/45°C)
- 1 large egg
- 1 large egg yolk
- ¼ cup (60g) unsalted butter, softened
- 1 teaspoon red food coloring
For the Filling:
- ½ cup (100g) brown sugar
- 2 tablespoons granulated sugar
- 2 teaspoons ground cinnamon
- 3 tablespoons (45g) unsalted butter, softened
For the Cream Cheese Glaze:
- 4 ounces (115g) cream cheese, softened
- ¼ cup (60g) unsalted butter, softened
- 1 cup (120g) powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk
Instructions
Step 1: Make the Dough
- In a large mixing bowl, combine the flour, yeast, cocoa powder, sugar, and salt.
- In a separate bowl, whisk together the warm milk, egg, egg yolk, and red food coloring.
- Gradually add the wet ingredients to the dry ingredients, mixing until a shaggy dough forms.
- Add the softened butter and knead the dough on a floured surface for about 8–10 minutes, or until it’s smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5–6 minutes.
- Place the dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm spot for about 1 hour or until it doubles in size.
Step 2: Prepare the Filling
- In a small bowl, mix the brown sugar, granulated sugar, and cinnamon.
- Spread the softened butter evenly over a clean work surface or rolling mat.
Step 3: Assemble the Rolls
- Punch down the risen dough and roll it out into a rectangle about 12×18 inches.
- Spread the softened butter over the surface of the dough, leaving a ½-inch border around the edges.
- Sprinkle the cinnamon-sugar mixture evenly over the buttered dough.
- Starting from one long edge, roll the dough tightly into a log. Pinch the seam to seal.
- Cut the log into 12 equal pieces and arrange them in a greased 9×13-inch baking dish, leaving space between each roll. Cover and let rise for 30–45 minutes, or until the rolls puff up and fill the gaps.
Step 4: Bake the Rolls
- Preheat your oven to 350°F (175°C).
- Bake the rolls for 20–25 minutes, or until they’re golden brown and cooked through.
Step 5: Make the Cream Cheese Glaze
- In a mixing bowl, beat the cream cheese and butter until smooth and creamy.
- Gradually add the powdered sugar, vanilla extract, and milk, beating until the glaze is smooth and spreadable.
Step 6: Glaze and Serve
- Allow the rolls to cool for about 10 minutes before spreading the glaze generously over the top.
