For the Dough:

  • 3 ¾ cups (470g) all-purpose flour
  • 2 ¼ teaspoons (1 packet) instant yeast
  • 2 tablespoons unsweetened cocoa powder
  • ¼ cup (50g) granulated sugar
  • ½ teaspoon salt
  • ¾ cup (180ml) warm milk (110°F/45°C)
  • 1 large egg
  • 1 large egg yolk
  • ¼ cup (60g) unsalted butter, softened
  • 1 teaspoon red food coloring

For the Filling:

  • ½ cup (100g) brown sugar
  • 2 tablespoons granulated sugar
  • 2 teaspoons ground cinnamon
  • 3 tablespoons (45g) unsalted butter, softened

For the Cream Cheese Glaze:

  • 4 ounces (115g) cream cheese, softened
  • ¼ cup (60g) unsalted butter, softened
  • 1 cup (120g) powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Instructions

Step 1: Make the Dough

  1. In a large mixing bowl, combine the flour, yeast, cocoa powder, sugar, and salt.
  2. In a separate bowl, whisk together the warm milk, egg, egg yolk, and red food coloring.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until a shaggy dough forms.
  4. Add the softened butter and knead the dough on a floured surface for about 8–10 minutes, or until it’s smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5–6 minutes.
  5. Place the dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm spot for about 1 hour or until it doubles in size.

Step 2: Prepare the Filling

  1. In a small bowl, mix the brown sugar, granulated sugar, and cinnamon.
  2. Spread the softened butter evenly over a clean work surface or rolling mat.

Step 3: Assemble the Rolls

  1. Punch down the risen dough and roll it out into a rectangle about 12×18 inches.
  2. Spread the softened butter over the surface of the dough, leaving a ½-inch border around the edges.
  3. Sprinkle the cinnamon-sugar mixture evenly over the buttered dough.
  4. Starting from one long edge, roll the dough tightly into a log. Pinch the seam to seal.
  5. Cut the log into 12 equal pieces and arrange them in a greased 9×13-inch baking dish, leaving space between each roll. Cover and let rise for 30–45 minutes, or until the rolls puff up and fill the gaps.

Step 4: Bake the Rolls

  1. Preheat your oven to 350°F (175°C).
  2. Bake the rolls for 20–25 minutes, or until they’re golden brown and cooked through.

Step 5: Make the Cream Cheese Glaze

  1. In a mixing bowl, beat the cream cheese and butter until smooth and creamy.
  2. Gradually add the powdered sugar, vanilla extract, and milk, beating until the glaze is smooth and spreadable.

Step 6: Glaze and Serve

  1. Allow the rolls to cool for about 10 minutes before spreading the glaze generously over the top.
  2. Serve warm and enjoy!
