Instructions
- Prepare the Peanut Butter Mixture: In a large mixing bowl, combine the peanut butter, sifted powdered sugar, and vanilla extract. Use a spatula to mix until smooth and well combined. This will create a firm, dough-like consistency that will hold the Rice Krispies together.
- Add the Rice Krispies: Gently fold the Rice Krispies cereal into the peanut butter mixture, taking care not to crush the cereal too much. Stir until the cereal is evenly coated with the peanut butter mixture.
- Shape the Balls: Using a small cookie scoop or a tablespoon, scoop the mixture and roll it between your palms to form small balls (about 1 inch in diameter). Place each ball on a parchment-lined baking sheet.
- Chill the Balls: Once all the balls are formed, place the baking sheet in the refrigerator for about 20 minutes to allow them to firm up. This step helps the balls hold their shape during the chocolate coating process.
- Melt the Chocolate: While the balls are chilling, melt the chocolate. Place the chopped chocolate or chocolate chips in a microwave-safe bowl, adding the coconut oil or butter if desired for a smoother coating. Microwave in 20-second intervals, stirring between each interval until fully melted and smooth.
- Coat the Balls in Chocolate: Remove the chilled peanut butter balls from the refrigerator. Using a fork or dipping tool, dip each ball into the melted chocolate, allowing any excess chocolate to drip off before placing it back on the parchment-lined sheet.
- Decorate: If you’re adding toppings, sprinkle them over the chocolate-coated balls while the chocolate is still wet. You can use sea salt flakes, sprinkles, crushed nuts, or shredded coconut.
