For the Turkey Breast
- 1 bone-in or boneless turkey breast (3–4 pounds, halal-certified)
- 4 tablespoons unsalted butter, softened (or olive oil for a lighter option)
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon smoked paprika (optional)
- 1/2 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Juice of 1 lemon
- 1 cup halal chicken broth (for basting)

- Fresh rosemary and thyme sprigs
- Lemon wedges
Instructions
Step 1: Prepare the Turkey Breast
- Thaw and Clean: If using frozen turkey breast, ensure it is fully thawed. Remove any packaging and pat the breast dry with paper towels to ensure the seasoning adheres properly.
- Preheat the Oven: Set your oven to 375°F (190°C) and position the rack in the center.
- Season Under the Skin: Carefully loosen the skin of the turkey breast by sliding your fingers between the skin and the meat. Spread half of the butter mixture directly under the skin, ensuring even coverage.
Step 2: Make the Herb Butter
- In a small bowl, combine softened butter, minced garlic, thyme, rosemary, smoked paprika (if using), onion powder, salt, and black pepper. Mix until well blended.
- Rub the remaining butter mixture all over the outside of the turkey breast, ensuring it is evenly coated. Squeeze lemon juice over the top for added flavor.
Step 3: Roast the Turkey Breast
- Place the turkey breast on a roasting rack in a large baking dish. If you don’t have a rack, use thick slices of onion or carrots to elevate the turkey.
- Pour the halal chicken broth into the bottom of the baking dish to create steam and keep the turkey moist during roasting.
- Roast the turkey breast uncovered for 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C) when measured in the thickest part of the breast.
Step 4: Baste for Extra Moisture
- Every 30 minutes, spoon the broth from the bottom of the pan over the turkey to keep it moist and flavorful. Add more broth if needed to prevent the drippings from drying out.
Step 5: Rest and Serve
- Once the turkey breast reaches the correct temperature, remove it from the oven and tent it with aluminum foil. Let it rest for 15-20 minutes to allow the juices to redistribute.
- Slice the turkey breast into even portions and garnish with fresh herbs and lemon wedges. Serve immediately.
