For the Seafood
- 1 pound salmon fillet, cut into 1-inch cubes
- 1/2 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and black pepper, to taste
For the Alfredo Sauce
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1/4 teaspoon ground nutmeg
- Salt and black pepper, to taste
For the Pasta
- 12 ounces fettuccine or linguine
- 2 tablespoons chopped fresh parsley, for garnish
- 1/2 cup reserved pasta water
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente.
- Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
Step 2: Prepare the Seafood
- In a mixing bowl, toss the salmon cubes with olive oil, paprika, garlic powder, salt, and pepper. Repeat with the shrimp in a separate bowl.
- Heat a large skillet over medium heat. Add the salmon cubes and sear for 2–3 minutes on each side until golden brown and cooked through. Remove and set aside.
- In the same skillet, cook the shrimp for 1–2 minutes per side until pink and opaque. Remove and set aside.
Step 3: Make the Alfredo Sauce
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant.
- Slowly pour in the heavy cream, stirring constantly. Bring to a gentle simmer and let it cook for 3–4 minutes.
- Stir in the Parmesan cheese, nutmeg, salt, and pepper. Whisk until the cheese is melted and the sauce is smooth.
Step 4: Combine the Ingredients
- Add the cooked pasta to the Alfredo sauce, tossing to coat evenly. If the sauce is too thick, add reserved pasta water, a few tablespoons at a time, until the desired consistency is reached.
- Gently fold in the salmon and shrimp, being careful not to break the salmon pieces.
Step 5: Garnish and Serve
- Transfer the pasta to serving plates or a large platter.
- Garnish with fresh parsley and extra Parmesan cheese. Serve immediately and enjoy!
