Salmon and Shrimp Alfredo

For the Seafood

  • 1 pound salmon fillet, cut into 1-inch cubes
  • 1/2 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste

For the Alfredo Sauce

  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper, to taste

For the Pasta

  • 12 ounces fettuccine or linguine
  • 2 tablespoons chopped fresh parsley, for garnish
  • 1/2 cup reserved pasta water

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente.
  2. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2: Prepare the Seafood

  1. In a mixing bowl, toss the salmon cubes with olive oil, paprika, garlic powder, salt, and pepper. Repeat with the shrimp in a separate bowl.
  2. Heat a large skillet over medium heat. Add the salmon cubes and sear for 2–3 minutes on each side until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, cook the shrimp for 1–2 minutes per side until pink and opaque. Remove and set aside.

Step 3: Make the Alfredo Sauce

  1. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant.
  2. Slowly pour in the heavy cream, stirring constantly. Bring to a gentle simmer and let it cook for 3–4 minutes.
  3. Stir in the Parmesan cheese, nutmeg, salt, and pepper. Whisk until the cheese is melted and the sauce is smooth.

Step 4: Combine the Ingredients

  1. Add the cooked pasta to the Alfredo sauce, tossing to coat evenly. If the sauce is too thick, add reserved pasta water, a few tablespoons at a time, until the desired consistency is reached.
  2. Gently fold in the salmon and shrimp, being careful not to break the salmon pieces.

Step 5: Garnish and Serve

  1. Transfer the pasta to serving plates or a large platter.
  2. Garnish with fresh parsley and extra Parmesan cheese. Serve immediately and enjoy!
