- 1/2 tsp smoked paprika (optional, for a smoky flavor)
- Salt and pepper to taste

Instructions
1. Prepare the Salmon
- If using fresh salmon, bake it in a preheated oven at 375°F (190°C) for about 15-20 minutes, or until cooked through. Allow it to cool, then flake it with a fork. If using canned salmon, drain it and remove any skin or bones.
2. Mix the Ingredients
- In a large mixing bowl, combine the flaked salmon, breadcrumbs, eggs, chopped onion, bell pepper (if using), mayonnaise, Dijon mustard, lemon juice, parsley, garlic powder, smoked paprika (if using), salt, and pepper.
- Mix the ingredients thoroughly until they come together into a cohesive mixture. If the mixture feels too wet, add more breadcrumbs; if it’s too dry, add a little more mayonnaise or a splash of water.
3. Shape the Patties
- Divide the mixture into 8 equal portions.
- Shape each portion into a round patty about 3 inches in diameter and 1/2 inch thick.
4. Cook the Patties
- Heat the olive oil or butter in a large skillet over medium heat.
- Once the oil is hot, add the patties in a single layer, leaving some space between them. You may need to cook them in batches.
- Cook for 3-4 minutes on each side, or until golden brown and crispy. Flip carefully to prevent them from breaking apart.
- Transfer the cooked patties to a plate lined with paper towels to absorb any excess oil.
5. Serve and Enjoy
- Serve the salmon patties warm, garnished with lemon wedges and parsley.
- Pair them with your favorite sides, such as a crisp green salad, roasted vegetables, or mashed potatoes.
