For the Salmon Patties:

  • 2 cups cooked salmon (fresh, canned, or leftover)
  • 1 cup breadcrumbs (panko or regular)
  • 2 large eggs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper (optional)
  • 2 tbsp mayonnaise or Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped (or 1 tsp dried parsley)
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika (optional, for a smoky flavor)
  • Salt and pepper to taste

For Cooking:

  • 2 tbsp olive oil or butter (for frying)

Optional for Serving:

  • Lemon wedges
  • Tartar sauce
  • Fresh salad greens or steamed vegetables

Instructions

1. Prepare the Salmon

  1. If using fresh salmon, bake it in a preheated oven at 375°F (190°C) for about 15-20 minutes, or until cooked through. Allow it to cool, then flake it with a fork. If using canned salmon, drain it and remove any skin or bones.

2. Mix the Ingredients

  1. In a large mixing bowl, combine the flaked salmon, breadcrumbs, eggs, chopped onion, bell pepper (if using), mayonnaise, Dijon mustard, lemon juice, parsley, garlic powder, smoked paprika (if using), salt, and pepper.
  2. Mix the ingredients thoroughly until they come together into a cohesive mixture. If the mixture feels too wet, add more breadcrumbs; if it’s too dry, add a little more mayonnaise or a splash of water.

3. Shape the Patties

  1. Divide the mixture into 8 equal portions.
  2. Shape each portion into a round patty about 3 inches in diameter and 1/2 inch thick.

4. Cook the Patties

  1. Heat the olive oil or butter in a large skillet over medium heat.
  2. Once the oil is hot, add the patties in a single layer, leaving some space between them. You may need to cook them in batches.
  3. Cook for 3-4 minutes on each side, or until golden brown and crispy. Flip carefully to prevent them from breaking apart.
  4. Transfer the cooked patties to a plate lined with paper towels to absorb any excess oil.

5. Serve and Enjoy

  1. Serve the salmon patties warm, garnished with lemon wedges and parsley.
  2. Pair them with your favorite sides, such as a crisp green salad, roasted vegetables, or mashed potatoes.
