  • Author: Amelia
  • Total Time: 27 minutes
  • Yield: 12 pieces 1x

Ingredients

Scale

For the Seafood Topping:

  • ½ cup cooked shrimp, finely chopped
  • ½ cup lump crab meat, picked over for shells
  • 4 ounces cream cheese, softened
  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 garlic clove, minced
  • ½ teaspoon smoked paprika
  • ½ teaspoon Old Bay seasoning
  • 1 green onion, finely chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and black pepper, to taste

For the Bread:

  • 6 slices of baguette or sourdough bread, cut diagonally
  • 2 tablespoons olive oil
  • 1 garlic clove, halved (for rubbing)

Optional Garnishes:

  • Extra chopped parsley
  • Lemon zest
  • Red pepper flakes

Instructions

Step 1: Prepare the Bread

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the bread slices on a baking sheet. Brush each slice lightly with olive oil on both sides.
  3. Toast the bread in the oven for 6-8 minutes, flipping halfway through, until golden and crisp.
  4. Once toasted, rub each slice lightly with the cut side of the garlic clove for extra flavor. Set aside.

Step 2: Make the Seafood Topping

  1. In a mixing bowl, combine the softened cream cheese, mayonnaise, sour cream, Dijon mustard, lemon juice, minced garlic, smoked paprika, and Old Bay seasoning. Mix until smooth and well-blended.
  2. Fold in the chopped shrimp, lump crab meat, green onion, and parsley. Gently mix to combine, ensuring the seafood remains intact.
  3. Taste the mixture and season with salt and black pepper as needed.

Step 3: Assemble the Toasts

  1. Generously spoon the seafood mixture onto each slice of toasted bread, spreading it evenly to cover the surface.
  2. For added flavor, sprinkle a pinch of smoked paprika or red pepper flakes on top.

Step 4: Broil

  1. Preheat your broiler on high.
  2. Place the assembled toasts back onto the baking sheet and broil for 2-3 minutes, or until the topping is warmed through and slightly golden. Keep a close eye to avoid burning.

Step 5: Garnish and Serve

  1. Remove the toasts from the oven and transfer them to a serving platter.
  2. Garnish with additional parsley, lemon zest, or red pepper flakes for an extra pop of color and flavor.
  3. Serve immediately and enjoy warm.
