Instructions

Step 1: Hard-Boil the Eggs

Start by placing your eggs in a single layer in a saucepan and covering them with cold water. Bring the water to a rolling boil over medium-high heat, then remove the pan from heat and cover it with a lid. Let the eggs sit in the hot water for 12 minutes before transferring them to an ice bath to cool completely.

Step 2: Peel the Eggs

Once the eggs are fully cooled, gently tap them on a hard surface and roll them under your palm to loosen the shell. Peel carefully, ensuring the egg whites remain intact. Rinse any shell fragments off under cool water.

Step 3: Smoke the Eggs

Preheat your smoker to 180°F (82°C) using your choice of wood chips. Hickory, apple, or cherry wood works beautifully for a balanced smoky flavor. Place the peeled eggs directly on the smoker grates or on a wire rack, ensuring they have enough space around them for the smoke to circulate. Smoke the eggs for 15-20 minutes, depending on how strong you want the smoky flavor to be. The longer they smoke, the more pronounced the taste will be.

Step 4: Prepare the Filling

While the eggs are smoking, slice the turkey bacon (if using) into small bits and cook it until crispy. Once the eggs are done smoking, let them cool for a few minutes before slicing them in half lengthwise. Carefully scoop out the yolks and place them in a mixing bowl.

Mash the yolks with a fork until they are smooth. Add mayonnaise, Dijon mustard, apple cider vinegar, smoked paprika, salt, and black pepper. Mix until the filling is creamy and well combined. If you like an extra smoky kick, you can add a dash more smoked paprika.

Step 5: Assemble the Deviled Eggs

Spoon or pipe the yolk mixture back into the egg whites, creating a beautiful swirl. If you want to be fancy, use a piping bag with a star tip to get a professional look.

Step 6: Garnish and Serve

Sprinkle the tops with additional smoked paprika, fresh chives, and crumbled turkey bacon. Serve immediately, or refrigerate until ready to eat. These deviled eggs taste even better after a little chilling time, as the flavors meld together perfectly.
