Smothered Chicken with Creamed Spinach, Bacon, and Mushrooms

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

For the Creamed Spinach Topping

  • 2 tablespoons olive oil or unsalted butter
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon nutmeg (optional)
  • Salt and pepper to taste

For the Turkey Bacon

  • 6 slices of halal turkey bacon, cooked until crispy and chopped

Garnish

  • Fresh parsley, chopped
  • Extra Parmesan cheese (optional)

Instructions

Step 1: Season and Sear the Chicken

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with garlic powder, smoked paprika, salt, and pepper.
  3. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.
  4. Sear the chicken breasts for 3–4 minutes on each side until golden brown. Remove from the skillet and set aside.

Step 2: Prepare the Creamed Spinach and Mushrooms

  1. In the same skillet, add 2 tablespoons of olive oil or butter.
  2. Sauté the diced onion and garlic for 2–3 minutes until softened and fragrant.
  3. Add the mushrooms and cook for 4–5 minutes until they release their moisture and start to brown.
  4. Stir in the chopped spinach and cook until wilted, about 2 minutes.
  5. Pour in the heavy cream and bring to a simmer.
  6. Stir in the Parmesan cheese and nutmeg (if using) until the cheese melts and the sauce thickens slightly. Season with salt and pepper to taste.

Step 3: Assemble and Bake

  1. Return the chicken breasts to the skillet, nestling them into the creamed spinach and mushroom mixture.
  2. Sprinkle the crispy turkey bacon over the top.
  3. Transfer the skillet to the preheated oven and bake for 15–20 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C).

Step 4: Garnish and Serve

  1. Remove the skillet from the oven and let the dish rest for 5 minutes.
  2. Garnish with fresh parsley and extra Parmesan cheese, if desired.
  3. Serve immediately with your favorite sides.
