For the Chicken
- 4 boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
For the Creamed Spinach Topping
- 2 tablespoons olive oil or unsalted butter
- 1 small onion, finely diced
- 3 garlic cloves, minced
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon nutmeg (optional)
- Salt and pepper to taste
For the Turkey Bacon
- 6 slices of halal turkey bacon, cooked until crispy and chopped
Garnish
- Fresh parsley, chopped
- Extra Parmesan cheese (optional)
Instructions
Step 1: Season and Sear the Chicken
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with garlic powder, smoked paprika, salt, and pepper.
- Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.
- Sear the chicken breasts for 3–4 minutes on each side until golden brown. Remove from the skillet and set aside.
Step 2: Prepare the Creamed Spinach and Mushrooms
- In the same skillet, add 2 tablespoons of olive oil or butter.
- Sauté the diced onion and garlic for 2–3 minutes until softened and fragrant.
- Add the mushrooms and cook for 4–5 minutes until they release their moisture and start to brown.
- Stir in the chopped spinach and cook until wilted, about 2 minutes.
- Pour in the heavy cream and bring to a simmer.
- Stir in the Parmesan cheese and nutmeg (if using) until the cheese melts and the sauce thickens slightly. Season with salt and pepper to taste.
Step 3: Assemble and Bake
- Return the chicken breasts to the skillet, nestling them into the creamed spinach and mushroom mixture.
- Sprinkle the crispy turkey bacon over the top.
- Transfer the skillet to the preheated oven and bake for 15–20 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C).
Step 4: Garnish and Serve
- Remove the skillet from the oven and let the dish rest for 5 minutes.
- Garnish with fresh parsley and extra Parmesan cheese, if desired.
- Serve immediately with your favorite sides.
